I like to be prepared, but I also have to carry around a 25 pound toddler in addition to this bag, so I needed to lighten it up!

A traditional chicken salad recipe has chicken, grapes, celery, and almonds. Many are served on a croissant too.

Where my recipe differs is in the dressing. The sauce that coats it all before you chill it and serve.

I like to add whipped whipping cream to the dressing to make it light, airy, and even a little bit fluffy.

Here’s the thing, I don’t sweeten my whipping cream. I simply whip it up with beaters, add the whipped cream to the other ingredients and fold it in gently. Try it!

The Spring Festival is happening now till May 10th at @crosseranch just North of SLC!!

THE BABIES: All the baby animals: Bunnies, chicks, calves, goats, piglets, lambs, foal, and a mini donkey!
And, yes, you can get up close and personal with them!

THE FUN: They also have all the various activities around the farm! They have a barrel train, ziplines, ropes course, mega slides, pony rides, kiddie corral, jump pads, hay ride, Lego blocks, fire pits, and more.

THE FOOD! I love their apple cider donuts, but new this year is a rotating weekly new flavor! The cherry almond vanilla cake donut blew us all away!

We had Coke, Gummy Coke Candy, Cola Flavored High Chews, and made my shredded sweet chicken which is made with a Coke!

Coke tee shirts are from Etsy as are some of the Coke decorations.

Daylan requested a purple birthday cake & for everyone to wear party hats so we did just that!

I wanted cake pops for my daughters 2nd birthday party with her friends so I made them myself instead of paying $4 a pop 🤯 my only regret is using these colored chocolate wafers instead of dyeing white chocolate because this doesn’t taste great or set well.

This recipe for easy cake pops requires you to bake a cake mix, according to the box directions, then throw the ENTIRE hot cake into a stand mixer fitted with a paddle attachment and let the mixer do the work.

The steam from the hot cake will be enough to bind the cake together, forming that familiar cake pop dough we are going for. No added frosting required!

Roll the dough into tight circles and set aside.

Then, melt down your chocolate melts of color and choice, dip the lollipop stick in the chocolate before pressing it into the cake pop, coat the entire ball in chocolate, embellish with sprinkles if desired, and sit upright until the chocolate has set.
