3 Easy Memorial Day Weekend Recipes
Memorial Day Weekend to me is the official kick off weekend to Summer! I am a summer loving girl and I get excited every year when Memorial Day rolls around! Whether you spend the weekend on a short getaway, in the mountains, by the pool, at the lake, in the backyard, or choose to spend the weekend with friends & family, I want you to have a delicious easy meal idea on hand! As for what to wear… We have Albion Fit to thank for the cutest outfits ever!
Today, I am sharing 3 simple recipes that will be sure to make Memorial Day delicious! My recipe for the very best Marinated Grilled Chicken, Grilled Ranch Potatoes, and my crowd pleasing S’more Cereal Bars! Make it with me!
Grocery Shopping List
For these 3 Easy Memorial Day Weekend Recipes, I wanted to share recipes that would be crowd pleasing and flavorful, but also only require a few minimal ingredients! Here is what you’ll need to make these recipes:
For the Marinated Grilled Chicken:
- 4-8 chicken thighs, trimmed
- 1/2 cup avocado oil
- 1 12 ounce can 7 Up or Sprite
- 1/2 tablespoon garlic powder
- 1 cup soy sauce
For the Grilled Ranch Potatoes
- 2 pounds baby red potatoes
- 3 tablespoons avocado oil
- 1 packet ranch seasoning
For the S’more Cereal Bars
- 10 cups Honey Maid S’more Cereal
- 1 cup unsalted butter
- 1 teaspoon vanilla
- 20 ounces mini marshmallows
- Optional: 1/2 cup chocolate chips
Preheat the Grill
To cook up both the Marinated Grilled Chicken and the Grilled Ranch Potatoes, we will be using my outdoor grill! When you are ready to grill, preheat it to Medium High Heat, about 350.
I love grilling in the warmer months! You get to be outside in the fresh air, you won’t need to heat up your house, and I truly love the flavor of grilled food! Those grilled ranch potatoes, all I will say is YUM!!
A No Bake Treat
The thing that I love about Cereal Bars is that they are a no bake recipe! These S’more Bars are so quick and easy to make, and everyone loves them!
For this recipe, I used the Honey Maid S’more Cereal I found at my local grocery store. Any “S’more” flavored cereal you can find will work for this recipe!
Also, if you want to get more servings out of this recipe, you can use a cookie sheet lined with parchment rather than a 9×13 baking dish. The bars will be thinner, but can serve up to 20 people!

Marinated Grilled Chicken
The very best, most delicious, Marinated Grilled Chicken! Perfect every time!
Ingredients
- 4-8 chicken thighs
- 1/2 cup avocado oil
- 1 12 ounce can 7 UP or Sprite
- 1/2 tablespoon garlic powder
- 1 cup soy sauce
Instructions
- To a gallon sized zip lock, add the avocado oil, soda, garlic powder, and soy sauce.
- Add the chicken and marinate overnight. (or between 4-12 hours)
- After the chicken has marinated, preheat the grill to medium high heat.
- Place chicken on the grill. Cook for approximately 5 - 6 minutes per side, depending on the thickness of chicken. The internal temperature of the chicken should reach 165 degrees.
- Remove chicken from grill and let rest for 5 minutes. Enjoy!
Grilled Ranch Potatoes
The most delicious Grilled Ranch Potatoes! The perfect side dish to every BBQ.
Ingredients
- 2 pounds baby red potatoes
- 3 tablespoons avocado oil
- 1 packet ranch seasoning
Instructions
- Wash and quarter red potatoes so they are equal in size.
- Place the chopped potatoes in a large resealable bag. Drizzle avocado oil into the bag, seal, and toss to coat the potatoes.
- Open the bag and sprinkle the ranch dressing packet over the potatoes. Seal and shake to evenly coat all the potatoes.
- Thread potatoes on skewers. Grill over medium heat for 15 minutes turning throughout to ensure even cooking. When potatoes are fork-tender, remove from grill and serve. Enjoy!
S'more Cereal Bars
All the fun and flavors of a classic S'more, made out of cereal!
Ingredients
- 10 cups Honey Maid S'more Cereal
- 1 cup unsalted butter
- 20 ounces mini marshmallows, divided
- 1 teaspoon vanilla
- Optional: 1/2 cup chocolate chips
Instructions
- Prepare a 9x13 pan with cooking spray and parchment paper.
- Measure out cereal into a large mixing bowl and set aside.
- To a saucepan over medium heat, add the butter. Stir until melted.
- Once melted, add 16 ounces of mini marshmallows, reserving the remaining 4 ounces, to the saucepan and continuously stir until the marshmallows are melted down, about 3-4 minutes.
- Remove from heat and stir in the vanilla.
- Pour marshmallow sauce over the Honey Maid S'more Cereal and mix until cereal is coated.
- Fold in the additional 4 ounces of mini marshmallows and optional chocolate chips.
- Pour the coated cereal into your pan. Firmly press to compact. Place in the fridge for 15 minutest to set.
- Cut and enjoy!
