A hearty vegetable soup the whole family will love! This ground beef vegetable soup is one of my favorite easy soup recipes! It’s similar to a delicious hamburger soup, but with a few more veggies and seasonings. One of my all-time favorite things to make during the winter is vegetable soup with homemade cornbread. Perfect on a cold winter day. Make it with me!
What You’ll Need to Make Hearty Vegetable Soup
- 1 pound ground beef
- 1 18 oz container Trader Joe’s Holiday Hash (or about 1/2 cup each butternut squash and sweet potato small diced, and 1/4 cup each small dice of red onion, & celery)
- One can 15 ounce diced tomatoes
- 1 can 15-ounce cannellini beans
- 8 cups low sodium chicken broth
- 1 cup ditalini pasta
- 2 Tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 Tablespoon Italian seasoning
- 1 Tablespoon garlic, 3 cloves
- To serve top with grated parmesan cheese
Trader Joes Holiday Hash
The inspiration for this soup was from the Trader Joes Holiday Hash veggie mix I bought this week. I’ve bought this mix before and have used it for different recipes and loved it! It has such a great flavor and it’s so easy to use since the veggies are all diced up nicely.
However, I am aware that this is a seasonal item at Trader Joe’s but you could easily make a homemade version for this recipe. It’s made up of diced sweet potatoes, butternut squash, celery, red onion, parsley, sage, and rosemary.
Here are what’s in it:
- 1/2 cup diced sweet potatoes
- 1/2 cup diced butternut squash
- 1/4 cup diced red onion
- 1/4 cup diced celery
- Teaspoon parsley
- Teaspoon sage
- 1 teaspoon rosemary

Hearty Vegetable Soup
Ingredients
- 1 pound ground beef
- 1 18 oz container Trader Joe's Holiday Hash (or about 1/2 cup each butternut squash and sweet potato small diced, and 1/4 cup each small dice of red onion, & celery)
- 1 can 15 ounce diced tomatoes
- 1 can 15-ounce cannellini beans
- 8 cups low sodium chicken broth
- 1 cup ditalini pasta
- 2 Tablespoon olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tablespoon Italian seasoning
- 1 Tablespoon garlic, 3 cloves

Instructions
- Add olive oil to a large soup pot or dutch oven and heat to medium heat.
- Add and cook ground beef until golden brown stirring often and crumbling as it cooks.
- Add diced vegetable hash, garlic, salt, pepper & Italian seasoning. Cook, stirring often until veggies are just tender for 5 minutes over medium heat.
- Add chicken broth, canned tomatoes, beans, and pasta to the soup. Bring to a boil. Cook until pasta is just tender.
- To serve, top with grated or shaved parmesan cheese. Enjoy!
