I wanted this salad to be colorful and flavorful! I reached for flavors that would pair well together while making a beautiful presentation!

- Romaine- chopped into bite-sized pieces
- Spinach- on it’s own or a blend of spring mix would be delicious!
- English Cucumbers- diced
- Celery- diced
- Cherry Tomatoes- diced
- Strawberries- sliced thin

Making this Salad Ahead of Time
This salad is a great one to prep and make ahead of time to save you time on a busy day! I recently made this for a baby shower and here’s what I did the day before.
- Candied Pecans– You can prep these the day before or even a few days in advance! They are so easy to make, literally, take 10 minutes, and they will elevate any salad with their delicious flavor and added crunch!
- Poppyseed Dressing– The dressing can and should be made at least a day ahead of time! I like to allow the flavors to marinate together in the fridge, and it also helps the poppy seeds soften and expand.
- Peaches- You can peel and dice the peaches in advance. I like to store them in the fridge in an air-tight container covered in orange juice so they don’t go brown.
- Strawberries- slice the day before and store in the fridge.
- Vegetables- dice the day before and store in the fridge.

Adding fresh herbs to any salad is going to add another element and depth of flavor. They add a vibrance that you can’t get anywhere else!
Don’t underestimate their power! Use what you have, chop it up finely, and add it to the mix. Mint, basil, thyme, and rosemary are all great salad additions.
This recipe specifically calls for fresh mint… don’t skip it!!

Spinach Strawberry Salad
A crowd-pleasing favorite spinach strawberry salad with candied pecans and a homemade sweet poppyseed dressing.
Ingredients
- 2-3 heads of romaine, chopped
- 16 ounces spinach
- 1 english cucumber, diced
- 1 stalk celery, diced
- 8 ounces cherry tomatoes, diced
- 8 ounces strawberries, sliced thin
- 2-3 peaches, peeled and diced
- 4-6 mint leaves, chopped
- 1 1/2 cups candied pecans
- Sweet Poppyseed Dressing
Instructions
- Add all the ingredients to a large salad bowl.
- Toss with sweet poppyseed dressing and enjoy!
