- 1/2 cup melted butter
 - 3/4 cup brown sugar
 - 1 egg
 - 1 egg yolk
 - 2 teaspoons vanilla
 - 3 overripe bananas, mashed
 - 1 1/2 cups all-purpose flour
 - 1 teaspoon baking soda
 - 1/2 teaspoon salt
 - 1/2 teaspoon cinnamon
 - 1/8 teaspoon nutmeg
 
For the Streusel Topping
- 1/2 cup all-purpose flour
 - 6 Tablespoons brown sugar
 - 1/2 Tablespoon cinnamon
 - 1/2 teaspoon salt
 - 3 Tablespoons softened butter
 

How to Make Banana Bread Muffins with Streusel Topping
- Preheat oven to 350 degrees.
 - Mix the butter, brown sugar, egg, yolk, and vanilla until smooth. Add in the mashed banana and mix again.
 - Add the flour, baking soda, salt, cinnamon, and nutmeg and stir gently until the batter comes together. Don’t overmix. Set aside.
 - In a small bowl, stir together the flour, brown sugar, cinnamon, salt, and butter until the streusel topping begins to come together. Use your hands to incorporate the butter until it reaches a wet sand-like consistency.
 - Portion the muffins into 12 tins and top each with a generous topping.
 - Bake for 18-22 minutes, watching until the tops turn golden brown. Remove from oven and enjoy!
