I bought all of my ingredients from Smith’s and Costco! I got the onions, spinach, and other mix ins at Smith’s and I got my buns, roast beef, and brie at Costco! The way that the brie compliments the caramelized apples, the flavor cannot be beat!
I wanted to use pretzel slider buns for this recipe but I found they are hard to find! I found some pretzel buns at my local bakery, Parsons. The pretzel bun brings a whole new element to this sandwich, but I am aware they are hard to find. They ones I used were not slider sized. For this recipe, you can use any type of slider bun you prefer, or that you can find! I prefer the slider buns from Costco that are in the blue package! They have a firm top, so that the butter mixture doesn’t make the bun soggy.

Roast Beef & Brie Sliders with Caramelized Onions & Apples
Yields 12 sliders
For the Caramelized Onions & Apples
3 tablespoons unsalted butter
2 yellow onions, sliced
2 honeycrisp apples, sliced thin
1/2 teaspoon salt
2 tablespoons brown sugar
For the Sliders
12 slider rolls
1 cup spinach
1 pound deli style roast beef
1 pound brie cheese wheel, sliced thin
1/2 cup unsalted butter
1 tablespoon dijon mustard
1 tablespoon honey
1 teaspoon garlic powder
Salt & Pepper
Preheat oven to 350.
In a small pan, melt the 3 tablespoons of butter for the caramelized apples and onions. Add the onions and salt, stirring occasionally until the onions soften and begin to caramelize, about 20 minutes. After onions are soft, add in apple slices and brown sugar, and stir to combine. Cook for an additional 2 minutes. Remove from heat and set aside.
In a small saucepan over medium high heat, melt the butter. Whisk in the mustard, honey, garlic powder, and salt and pepper. Cook for 1 minute, then remove from heat.
In a 9×13 baking dish, brush 2 tablespoons of the melted butter on the bottom of the dish. Place the bottoms of the rolls in the dish. Layer on baby spinach, roast beef, and brie cheese. Top with caramelized onions and apples. Place the tops on the rolls, and pour the remainder of the melted butter mixture over the top.
Cover with foil and bake for 15-20 minutes or until cheese is melted. Remove from heat and serve immediately.
