Nothing screams fall more than a hot pan of roasted seasonal veggies! These sheet pan veggies are so yummy! I used sweet potato, zucchini, yellow squash, and brussel sprouts! They are simple and easy to make, and there is something for everyone. Make it with me!
I used my favorite fall flavors for this sheet pan of veggies. You could use any type of veggies you want on yours such as broccoli, carrots, red onion, or cauliflower. SO YUMMY!
Sheet Pan Fall Roasted Veggies
Serves 6
2 sweet potatoes, peeled and cubed
2 zucchini, cubed
2 yellow squash, cubed
2 cups brussel sprouts
4 tablespoons olive oil
Salt & Pepper
Optional: parmesan cheese
Preheat oven to 400.
Place all the cubed veggies on a sheet pan.
Drizzle with olive oil and season with salt & pepper.
Bake for 20-25 minutes, or until soft.
When finished, sprinkle with parmesan cheese.
Serve hot.
