I am so excited to be sharing that I have finally perfected this light Creamy Cauliflower Alfredo Sauce. I have attempted making it before and it has been a battle between me and consistency and flavor. I could not get it right but I didn’t give up. With much time and effort, I may proudly present to you the perfect cauliflower alfredo sauce!
The cauliflower in this recipe is replacing the thick cheeses like cream cheese that are used in regular alfredo recipes. By doing so, it makes the recipe lower in fat, dairy products and added calories, without losing the flavor of the sauce! Cauliflower is such a great vegetable One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It is also a good source of vitamin K, protein, fiber, and vitamin B6. I am not a huge fan of cauliflower standing alone, but there are so many ways to use it in regular everyday recipes. This alfredo sauce has a full serving of vegetables because of the cauliflower in each cup, and you wouldn’t even know it! It is a perfect way to hide the veggies for those picky eaters!
This recipe doesn’t take up too much time for prep and cooking. And even better, it makes a ton! For me, it filled my Blendtec blender to the brim. If you do not have a Blendtec Blender, you can use your own, but I would highly recommend Blendtec! I am picky picky picky when it comes to blenders leaving chunks. Believe me, I bought a $20 blender from Walmart my freshman year of college and it sat in the pantry because I could not stand having chunks in my smoothies! This blender gets everything broken down and smooth. After using Blendtec, I cannot go back. You will feel the same way when you make the switch! Creamy Cauliflower Alfredo Sauce
1 tablespoon coconut oil
5 cups chicken or vegetable broth
3/4 cup almond milk
1/2 cup greek yogurt
1/2 teaspoon sea salt
Optional: Fresh Basil
Slice onion into thin slices. Melt coconut oil in a skillet on low heat. Add onion slices and garlic and saute on low until the onions are golden and caramelized.
Bring chicken or vegetable broth to boil. Cut the cauliflower into small pieces and add to broth. Cook until tender, about 7-9 minutes. Save 1/2 cup broth and drain the rest.
In the Blendtec place the tender cauliflower, caramelized onions, garlic, 1/2 cup broth, milk, greek yogurt and salt. Blend until smooth. Serve or store in air tight container for later use.
