Have you ever tasted a Mini Melt Away cookie before? If you haven’t you are definitely missing out because they are so yummy! Melt in your mouth kind of good…literally! Not only are these charming little cookies tasty, they are also perfect for many occasions! I would love to serve these at a wedding, lunch-in, or birthday party. Also, I think they would be exceptionally fitting for a little girls tea party! You really can coordinate them to fit any occasion by simply changing the color of the frosting to suit your fancy! The added cornstarch to this recipe is what makes these cookies melt! Seriously, once it comes in contact with your tong, the cookie just melts away! Hence, the name! So easy to throw together and they look perfect for every event! It’s one of my favorite recipes to cater with!
You can frost these cookies one of two ways! Totally depends on preference! You can brush the frosting on the cookies with a knife or you can put the frosting in a piping bag and pipe it on the cookies. Both options work great! It’s up to personal preference!
Mini Melt Away Cookies
Yields: about 2 dozen mini cookies!
1/2 cup powdered sugar
1 cup butter, softened
1/2 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon
1/4 cup
1/4 cup (softened)
2 cups
1 tablespoons
Preheat the oven to 350 degrees and line a baking sheet with a baking mat or parchment paper.
Combine the sugar and butter in a large bowl and beat until light and fluffy, about 2 minutes. Add the vanilla and combine. Add the flour and cornstarch and mix on low speed until well combined.
Cover the cookie dough and refrigerate for 30 minutes.
Shape the dough into round 1/2-inch balls and place a few inches apart on the cookie sheet. Bake for 10-12 minutes or until the edges are lightly browned. Let the cookies cool on the baking sheet for one minute and then remove and let them cool on a wire rack.
For the glaze, combine the powdered sugar, butter, vanilla extract and milk. Pipe or spread the glaze over cooled cookies.
Enjoy and store any extras in an air-tight container.
