Meatballs to me are such a crowd pleasing treat. They are so fun on spaghetti, for a tailgate, as an appetizer, or as a main dish. There are so many fun flavors to make meatballs with! These Hoisin Ginger Meatballs are a new family favorite recipe! I have teamed up with Kodiak Cakes, to make this recipe even more amazing! The Kodiak Cakes Protein Packed Flapjack Mix adds a delicious flavor, as well as added protein, to these yummy meatballs! Don’t knock it until you try it! I know what you are thinking, pancake mix in meatballs? WHAT IS SHE THINKING?! I’ll tell you what I am thinking. For healthy eaters, bread crumbs are almost always a turn off. They add too much fat and carbs and wasted calories. Bread crumbs are an energy dense food. Healthy eaters are looking for nutrient dense ingredients. Well, I thought about this and I came up with this; why not use my favorite Kodiak Cakes Mix instead? Kodiak Cakes are awesome because they are high in protein, while still providing that dense thickening agent that the meatballs need! And, it tastes amazing! Let me be the first to tell you that I am so happy with the results!

The flavor of these meatballs is unique and delicious! Hoisin sauce has such a great flavor! It comes in a bottle, and you can find it at the grocery store in the asian food section! Paired with the flavor of the sesame oil, ginger, and garlic, it’s a match made in heaven! This is an asian themed recipe so we like to serve it over a bed of either white or brown rice.
Hoisin Ginger Meatballs
Yields: 24 large meatballs
Meatballs:
2 pounds ground beef
2/3 cup Kodiak Pancake Mix
4 teaspoons minced garlic
2 teaspoons sesame oil
2 teaspoons ground ginger
2 eggs
Hoisin Ginger Sauce
1/4 cup hoisin sauce
1/4 cup rice vinegar
4 tablespoons soy sauce
3 teaspoon ground ginger
3 teaspoons sesame oil
2 tablespoons sesame seeds
2 tablespoons green onion
Preheat oven to 400. In a medium bowl, combine all the meatball ingredients. Add the ground beef, or turkey, Kodiak Pancake Mix, minced garlic, sesame oil, ginger, and eggs. Using your hands, mix until well incorporated. Using a 2 inch cookie scoop, measure out and roll meatballs. Place on a cookie sheet lined with parchment paper. Bake for 20 minutes or until the inside is cooked through.
While the meatballs are baking, in a small sauce pan over low heat, combine the hoisin sauce, rice vinegar, soy sauce, ginger, and sesame oil. Stir until well combine. When meatballs are finished, coat each meatball by dipping or pouring the sauce over the top. Finish with sesame seeds and green onions. Serve over rice.
