This week I made my first cake, EVER! I have made little birthday cakes in 9×13 pans of course and bunt cakes, but this was my very first time making a real tiered cake! I am so excited about how it turned out! It is not perfect, there are errors and mistakes everywhere, it leans to one side, the frosting isn’t smooth, but I am proud! That’s what is most important here! It was a learning experience for me and I am proud of myself for trying! I wanted to see where my cake skills are at just for fun! I followed the recipe and tutorials from Cake by Courtney who is my favorite cake blogger to follow on Instagram! If you don’t know her, you should start following her! I love watching her Instagram tutorials in her stories and all her amazing pictures of cakes that she makes and posts! Check her out!!
I made this cake for my moms birthday April 20th. Happy birthday mom, I love you!! She is my biggest supporter and encouraged me to take on this cake! She bought me 3 round pans, cake stands, and all of the ingredients to get started! It was not easy. This cake seriously took me 2 days, like 7 hours total! But it was SO. MUCH. FUN! My mom and I went through Cake by Courtney’s page to pick out what recipe to make! She chose the Lemon Poppyseed Cake with the raspberry filling! It was a good choice because it was heavenly!
The hardest part for me was to build it. Making the batter and the cake wasn’t too bad. Once the cakes were made and cooled, it was time for the assembly. I made the raspberry filling myself and had it all ready to go. There is definitely a talent in cake baking that I do not have. If I had the necessary equipment, I feel that leveling the cake would have been less of a struggle. Anyway, I managed! The cake finished off as a 6 level cake, with a Lemon Cream Cheese frosting and it was delicious! It was super hard and a lot of work, but I had fun! I am proud of myself for where I am, and I am looking forward to taking some more cake baking classes to learn more!
