One of my families favorite recipes has always been and will forever be German Pancakes! There is just something about the texture, the fluffiness, and the crisp edges that make them irresistible! Every year for Conference Weekend, my mom would kick off the Saturday morning session with a hot pan of German Pancakes ready to go! We would all come running to the kitchen and top our slices with butter that would instantly melt from the warm pancake. Then we would drown it in syrup and top it off with so much powdered sugar it looked like a 3 foot snow fall on Christmas morning! German pancakes are a recipe that has been in my family forever!
I have not wondered until now in this very moment why they are called German Pancakes. I never questioned it before, but I am questioning it now! So I looked it up. I found on Wikipedia that “a Dutch baby pancake, sometimes called a German pancake, a Bismarck, or a Dutch puff, is a sweet popover that is normally served for breakfast.” So there. Now you know why they are called German pancakes!
The best part about the pancake is that it overflows in the pan and forms these crispy tall edges like photographed here. This step comes from blending the batter quickly for an extended amount of time, causing the eggs to whip which results in the pancake to rise. We love it and always would fight over who got the tallest corner on there piece.
I just want to take a second to introduce General Conference Weekend. General Conference is a gather of members of The Church of Jesus Christ of Latter-day Saints. It is held biannually every April and October. It is a time where all the members of the church and investigators can listen to the profit and his apostles speak. It is a free event held near Temple Square in Salt Lake City, but you can also tune in and watch it on TV. It is on channel 5. It is a beautiful time for everyone to gather together and listen to the words of these amazing influences and learn a little bit more about yourself, faith, charity, service, love and many other cool topics. German Pancakes
2-3 tablespoons butter
6 eggs
1 cup milk
1 cup flour
1 teaspoon salt
1 teaspoon vanilla
Preheat oven to 400. As the oven is preheating, place 2-3 cubes of butter in a 9×13 pan for a few minutes while the oven is heating up to melt the butter. Then, remove the 9×13 and coat the bottom and sides of the pan by tipping and turning the pan until each side has been buttered.
In a blender, add eggs, milk, flour, salt, and vanilla. Blend on high for 3-5 minutes, making sure the eggs are properly beaten. Pour into 9×13 pan and bake for 20-22 minutes, or until the sides are puffy and golden brown!
We serve ours with syrup, powdered sugar, whip cream, fresh fruit, nutella, cinnamon, whipping cream, or jelly! Whatever you love on your pancakes you will LOVE on these German Pancakes!
