What is a Thanksgiving table without Pie? Well in all honestly, probably just fine. But that’s my personal opinion! We’ll get into that in this post later on. If you follow me on Instagram, you know that I made a bold statement this month. I told everyone that I am not a fan of pie, which is the truth. But, I challenged myself this month that I am going to #MakeFriendsWithPie.
My problem with Pie is that I don’t like warm fruit at all. Naturally, I don’t like fruity pies. So, I asked for recommendations from my IG followers for their favorite, non fruit, pie flavors. PECAN was by far the most recommended pie flavor. Naturally, it was at the top of my list to try!
Pecan Pie is wildly overlooked, from personal experience.
I am biting my tongue as I write this, literally, but Pecan Pie has been overlooked by me personally for years. In my defense, we eat with our eyes and pecan pie isn’t the prettiest. Let’s be honest, it’s fine we are all friends here. I also am not a huge fan of nuts in things. I love nuts on their own, but when they are baked I usually pass. So, year after year has gone by and I have never even been so much as tempted to taste that brown, scary looking pie. But, I was wrong to not try it.
It wasn’t until so many of my IG friends told me that it is their favorite pie flavor that I decided to give it a go. I searched and scrolled through a dozen pecan pie recipes to get an idea of the ingredients and flavors I would be trying to achieve. After reading so many recipes, I was excited more than anything to dive into developing this pie!
Sugary, Caramel, Sweet…
Sugary, Caramel, and Sweet were words that many bloggers and chefs used to describe this pie. Anything that has those three words in it’s description is usually something I’d go for! Caramel is my favorite flavor!
So I did! I baked up a few Pecan Pies!
And I came to find that I really quite liked it. It was exactly what everyone said it would be. Sugary, Caramel, and Sweet!
Do I love Pie now?
I can’t say that I would put it in my top 10 list of desserts I love, or even 20 for that matter, but that’s because I don’t love pie. That’s my own issue. I just have loyalty to brownies and cookies and other treats. I have a couple more recipes I am excited to try in this #MakingFriendsWithPie challenge, so stay tuned!

Easy Pecan Pie
If you have to have pie this holiday season, I would recommend this Easy Pecan Pie! Give it a try! This pie is sweet, custardy, sugary, and has an almost caramely goodness to it.
Ingredients
Pie Crust
- 1 cup flour
- 1/2 cup shortening
- 1/2 teaspoon salt
- 1/4 cup cold water
Pie Filling
- 1 cup sugar
- 3 tablespoons brown sugar
- 1/2 teaspoon salt
- 1 cup corn syrup
- 1 teaspoon vanilla
- 1/3 cup melted butter
- 3 eggs
- 1 cup chopped pecans
Instructions
For the Pie Crust
- Mix flour and salt together in a large bowl.
- Cut in shortening with pastry blender. The dough will become soft and sand like. Do not stir.
- Add 1/2 cup water all at once.
- Fold ingredients with fork until flour is absorbed and dough comes together.
- Flour surface and rolling pin well. Flatten dough with hand to make round disc shape.
- Roll out from center to form a round crust shape. Place the pie plate on top of the dough. The dough should be rolled out about 2 inches past the edge of the pie plate.
- Fold dough in half, lift onto pie plate. Open and shape to pan, make sure to gently press the pastry into the corner of the pie plate. Cut off the excess dough.
- Side aside until ready to fill.
For the Pecan Filling
- Preheat oven to 350.
- In a bowl, mix together sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together.
- Add chopped pecans to the bottom of the unbaked pie shell.
- Pour syrup mixture over the top.
- Cover top and crust lightly/gently with foil.
- Bake pie at 350º for 30 minutes. Remove foil, then continue baking for 20 minutes, being careful not to burn the crust or pecans.
- Allow the pie to cool for several hours or overnight.
Notes
This recipe is a great make ahead recipe!
You can also use frozen pie crust or pre-made pie crust to save time and steps!
I wasn't worried about making the edge of this pie pretty. If you want to make the edge crimped our styled, feel free!
