This dish has spaghetti noodles, topped half with meat sauce and half with brown butter & mizithra cheese! It’s the best thing ever!! The browned butter is, as expected, delicious! Manager’s Special
This Old Spaghetti Factory Manager’s Special dish is a family favorite, both to eat at home and to order at the restaurant. It’s a classic! The Manager’s Special is half meat sauce and half mizithra with browned butter!

For the Meat Sauce
For the meat sauce portion of the recipe, I typically keep things simple. I honestly will brown up some ground beef or ground turkey in a skillet with olive oil and garlic. Then, when the meat is cooked, I’ll just add a bottle of marinara sauce on top. Since the browned butter has to be made from sratch, I typically just go for bottled sauce. You can use any sauce you like!

For the Browned Butter
The browned butter portion of this recipe is exactly how it seems. You simply have to cook up some butter until it becomes golden brown. You will place the butter into a saucepan and warm it on medium heat. It will take about 10 minutes, then it will begin to froth. You will continue to cook the butter until it begins to brown, whisking repeatedly. Once it turns the shade of caramel you will have browned butter.
It’s important that you remove it from the hot sauce pan as soon as it turns golden, to prevent it from burning. Just pour it in a glass dish or bowl once browned!
Mizithra Cheese
Mizithra or myzithra is a fresh cheese made with milk and whey from sheep or goats, or both. The ratio of milk to whey usually is 7 to 3. Production resembles that of Italian ricotta.
I buy it at Smith’s in the Fancy Cheese Section. It comes in a block that you shred yourself! It’s soooo good!

Old Spaghetti Factory Manager's Special
Have you ever eaten at The Old Spaghetti Factory? My very favorite thing on the menu there is the Manager's Special! This dish has spaghetti noodles, topped half with meat sauce and half with brown butter & mizithra cheese! It's the best thing ever!!
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 clove minced garlic
- 1 bottle Marinara sauce
- 24 ounces spaghetti noodles
- 1 cup butter
- 1 cup shredded mizithra cheese
Instructions
- In a large pot, bring water to a boil. Add noodles and cook for 10 minutes, or until softened.
- In a smaller pot, place cubes of butter in the pot on a medium heat. Stirring occasionally, allow butter to cook for 10 minutes, or until golden brown. Once the butter froths and turns to a caramel color, remove from pot. Simply place it in a glass cup or bowl for serving.
- In a frying pan, brown meat & garlic on medium heat until meat is cooked through. When meat is cooked, add the jar of sauce to the pot. Meat sauce is ready when it is warmed through.
- Shred Mizithra cheese and set aside.
- Portion out a serving of noodles on a plate. Top half with meat sauce, and half with browned butter & shredded mizithra cheese. Enjoy!
