Beef & Bean Enchiladas
The base of these enchiladas are made with ground beef and black refried beans.
For the ground beef, you can use any that you have on hand! We often buy ground beef in large quantities, and it’s something we always have on hand in our freezer.
You could also sub the ground beef for ground chicken or ground turkey if you would rather!
For the beans, I like to use black refried beans for a little bit more flavor. If you can’t find black refried beans at your grocery store, you can use regular. You could also make your own!
Dinner In Under An Hour
Who doesn’t love a quick and easy dinner recipe? I know that I do because I am always pressed for time! I love that these can be made start to finish in under an hour!
All you need to do is prepare the enchilada filling, by browning the ground beef, adding in the seasonings and spices, and the refried beans.
Simply stuff the filing into 8 tortillas, roll and place into a prepared 9×13. Pour the red enchilada sauce over the top of the tortillas and bake.
#1 Casserole Tip
My number one tip for making any type of casserole in a glass baking dish, whether it be enchiladas, lasagna, or some other casserole. My tip is to spread a little bit of the sauce/filling right on the bottom of the prepared baking dish.
Having a little bit of sauce and filling on the bottom layer helps to regulate the cooking process and allows it to bake more evenly.
In the case of these enchiladas, I spread a little bit of the beef and bean mixture in the bottom of my greased baking sheet. Then, I place the enchiladas on top and everything bakes more evenly.

Beef & Bean Enchiladas
These enchiladas are made with refried beans, seasoned ground beef, red enchilada sauce, and shredded cheddar cheese! They are hearty, flavorful, and delicious!
Ingredients
- 1/2 cup chopped onion
- 2 tablespoons butter
- 2 lbs hamburger or turkey
- Salt & Pepper to taste
- 1 7oz can mild green chilies
- 15 oz can black refried beans
- 10 oz can cream of mushroom soup
- 1 pint light sour cream
- 2-4 Cups cheddar cheese
- 2-4 Cups mozzarella cheese
- 8 flour tortillas
- 1 large can red enchilada sauce
Instructions
- In sauce pan, sauté onion in butter until translucent. Add 2 lbs ground beef and brown until cooked throughly. Salt & pepper to taste.
- Add one can green chili’s, a can of refried beans, mushroom soup, sour cream to the ground beef. Cook for 2-3 minutes on medium heat until everything is warm.
- Spray 9x13 pan with cooking spray.
- To the prepared baking sheet, add enough of the soup mixture to lightly cover the bottom of the pan.
- Place a scoop of beef & bean mixture in each tortilla, and sprinkle a little cheese inside each one. Place in baking dish. Repeat until dish is full (approx 8 enchiladas)
- Pour one large can of red enchilada sauce over the top of the enchiladas.
- Bake uncovered at 350F for 25 minutes.
- Sprinkle with cheese on top bake another 5 minutes. Enjoy
