Cornbread Waffles
Cornbread waffles may sound silly at first but they are a real treat! They are quick and easy to make, plus they compliment the chili and cheese toppings so well!
These waffles are made simple with cornmeal, flour, milk, eggs, baking soda and sugar. I always have all of the ingredients on hand.
They come together in a matter of minutes! This recipe will make 5 waffles!

It’s an Instant Pot recipe but you can also make it on the stovetop! Whatever method you prefer is great.
You can also use any chili recipe that you have! Chili and cornbread go SO WELL together so I know you will love this combo!
Making the Cornbread Waffles
I have a double belgian waffle maker that makes cooking up waffles quick and easy! I love that I can cook two at a time.
For the temperature settings, I set mine to medium heat (which is a 3.5 on my number scale). We want the waffles to get golden in color and crispy, without burning.
Any waffle maker you have will work for this recipe! The amounts may vary depending on your size and depth of the grooves. You can adapt as necessary!

Cornbread Waffles and Chili
The best, easiest comfort food! Cornbread waffles topped with homemade chili! Hello easy dinner!
Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/4 cups yellow cornmeal
- 1 Tablespoon baking powder
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 2 cups milk
- 3 Tablespoons vegetable oil
- 2 large eggs
- 5 cups (1 per serving) homemade chili
- Optional toppings* shredded cheese, sour cream, avocado, green onion.
Instructions
- Preheat waffle iron to medium heat.
- In a large bowl combine the flour, cornmeal, baking powder, sugar, and salt.
- Add milk, oil, and eggs and stir until incorporated, but don't over-mix. Leave it a little lumpy.
- Spray waffle iron with non-stick cooking spray. Pour batter onto hot waffle iron and bake in batches.
- Serve with chili over top and garnish with shredded cheese, sour cream, avocado and chopped green onion.
