Delicious Shrimp Scampi Recipe
Many of you have requested for me to share more seafood recipes on my site, which I am happy to do! I am not a huge seafood fan, but I do like shrimp when it is cooked right!
I also like salmon, sushi, and white fish. For me, it’s all about how it is prepared and the recipe I am making if I love it or not.
I totally love this shrimp scampi recipe because it’s simple and flavorful. The lemon flavor really shines through in this dish.
You’ll also need orzo pasta, spinach, shallots, garlic, white wine, shrimp, lemons, olive oil, salt & pepper.
In less time than you can get take out, this recipe can be cooked and on the table in 20 minutes! Life is busy but meal times don’t have to be!
This recipe is incredibly simple and that really is why I love it.
What Shrimp Should I Use For This Scampi?
The shrimp is the star of the show in this recipe and it’s the source of protein! You want to use good quality shrimp.
You can either use raw or fully cooked, frozen shrimp. Just be sure that the shrimp is peeled with the tails removed, and I like to look for some that are a little bigger than normal.
I most often buy my shrimp from Trader Joes in the frozen food section. The shrimp come fully cooked and I just thaw it out as the recipe is written below and it works great!
You can also buy shrimp at your local grocery stores like Kroger, Harmons, Whole Foods, Sprouts, and Walmart!
Lemon Shrimp Scampi
I recommend using real lemons in this recipe. When lemon is the main flavor of a dish like this one, I always recommend using the real thing over any artificial lemon juice.
This recipe also calls for lemon zest, which you will need a lemon to be able to have that.
Fresh lemon juice and fresh lemon zest make this recipe and other recipes taste so good!
I have a lemon squeezer from amazon that makes juicing lemons a breeze! It’s fast and easy to use.

Lemon Shrimp Scampi
This easy lemon shrimp scampi is simple and delicious! Perfect for an easy weeknight dinner.
Ingredients
- 1 pound orzo pasta
- 1/3 cup extra-virgin olive oil
- Zest of 2 lemons
- 1/2 cup fresh lemon juice from 2 lemons
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons extra-virgin olive oil
- 1 shallot chopped
- 1 pound large shrimp peeled and deveined
- 1 teaspoon kosher salt
- 1/2 cup dry white wine
- 3 cups spinach
Instructions
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 6 to 8 minutes. Drain and reserve about 1 cup of the pasta water.
- In a small bowl, whisk together the olive oil, lemon zest, lemon juice, salt, and pepper until smooth. Set aside.
- In a large skillet, heat the oil over medium-high heat. Add the shallots and cook until soft, 2 to 3 minutes.
- Add the shrimp, salt, and pepper. Cook until the shrimp turn pink and are cooked for 2 to 3 minutes. Remove the shrimp from the skillet.
- Increase the heat to high. Add the wine and spinach. Using a spoon, scrape up the brown bits that cling to the bottom of the pan. Cook for 1 minute until most of the liquid has evaporated and the spinach has wilted.
- Add the cooked pasta, cooked shrimp, vinaigrette, and pasta water to the skillet. Toss until all the ingredients are coated. Enjoy!
