These carrot cake bars are the perfect recipe to make this time of year! The bars themselves are soft, moist, and flavorful! Top it off with creamy homemade cream cheese frosting and watch these bars get devoured. These would be perfect to make for Easter weekend, a baby shower, or even just for a fun dessert on a spring day. Make them with me!
What You’ll Need to Make Carrot Cake Bars
- Avocado Oil- or another mild-flavored oil
- Granulated Sugar
- Brown sugar- light brown, packed
- Eggs
- Vanilla Extract
- All-Purpose Flour
- Ground Cinnamon
- Ground Nutmeg
- Baking Soda
- Salt
- Finely Grated Carrots- grate them fresh, just before adding them to the batter
- Optional: any chopped nuts or raisins. As you can see in my images, I left these out
For the Frosting
- Cream Cheese
- Butter
- Vanilla Extract
- Powdered Sugar
HOW TO MAKE CARROT CAKE BARS:
Here are the basic steps to make these carrot cake bars!
I have included the full instructions and ingredient measurements in the recipe card below!
- Make the batter. Mix the wet ingredients in a bowl, then add all your dry ingredients and then combine and stir until smooth. Fold in the grated carrots.
- Bake. Pour the batter evenly into a greased 9×9-inch baking dish. Then bake for about 35-40 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Transfer the baking dish to a wire baking rack and let cool until the cake reaches room temperature.
- Make the frosting. Meanwhile, in a separate mixing bowl, stir together all of the cream cheese ingredients until smooth.
- Frost and serve. Once the cake has cooled, spread it evenly with the cream cheese frosting. Then slice, serve and enjoy!

Carrot Cake Bars
Easy carrot cake bars that are perfectly moist and delicious! Topped with a generous portion of cream cheese frosting!
Ingredients
- 3/4 cup avocado oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 Tablespoon vanilla
- 1 2/3 cup flour
- 2 teaspoons cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup finely grated carrots
Cream Cheese Frosting
- 4 ounces cream cheese, softened
- 1 Tablespoon butter
- 1 teaspoon vanilla
- 1 1/2 cups powdered sugar
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, mix together the oil and sugars. Add in the eggs and vanilla and whisk until smooth.
- Add in the flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Stir until smooth. Fold in the grated carrots.
- Pour the batter into a greased 9x9 glass baking dish and spread it out evenly. Bake for 30-40 minutes until a toothpick comes out clean. Transfer to a wire cooling rack and let cool completely.
- Prepare the frosting by beating together all the ingredients until smooth. Frost the carrot cake bars with frosting and enjoy!
