Adding the can of coconut milk makes the rice creamy and gives it that fresh coconut flavor. It pairs so well with teriyaki chicken or any Thai dish! Make it with me!
HOW TO MAKE COCONUT RICE IN AN INSTANT POT
Making coconut rice in the instant pot is really simple and easy! All you need are a few ingredients and an electric pressure cooker. This coconut jasmine rice simply can’t be beaten!
I have the Instant Pot brand of an electric pressure cooker, but any brand should work with this recipe and instructions.
When making rice in the instant pot, white, brown, or coconut rice even, I prefer to use the manual button rather than the “rice” button provided on the outside. So, if your pressure cooker has a manual high-pressure setting, you can follow this recipe!
Other than that, it’s a simple dump recipe! It turns out creamy, flavorful, and totally delicious!
What You’ll Need To Make Coconut Rice
All you’ll need are a handful of ingredients.
- Jasmine or Basmati Rice
- 14-ounce can of Coconut Milk
- Water
- Sugar
- Salt
That’s it!
What Rice Should I Use?
I have found that jasmine or basmati rice work really well with this recipe! You want to use white rice.
If you want to make this coconut brown rice, you will need to up the cooking time significantly. Brown rice takes about 24 minutes to cook up in the Instant Pot.
Personally, I prefer making this recipe with a long grain white rice, as instructed in the recipe card for best results.
WHAT TO SERVE WITH INSTANT POT COCONUT RICE
I really love the flavor of this coconut rice! It’s subtle enough that it can be used in a wide variety of recipes, and it is more flavorful than plain white rice.
I love using it as the base in homemade rice bowls. I like making coconut rice and putting it in the bottom, then building it up with teriyaki chicken and fresh steamed vegetables.

Instant Pot Coconut Rice
The most delicious instant pot coconut rice! Creamy, mildly sweet, and flavorful!
Ingredients
- 2 cups cups jasmine or basmati rice
- 1 can (14 ounces) unsweetened coconut milk
- 1/2 cup water
- 1 teaspoon sugar
- 1/4 teaspoon salt
Instructions
- Rinse rice in cool water until the water runs clear. Drain the rice in a colander and add to the pressure cooker.
- Add coconut milk, water, sugar, and salt to the pressure cooker pot. Stir. Lock the lid in place. Select manual High Pressure and 3 minutes cook time.
- When the cooking time ends, allow the pressure to release naturally for 7 minutes, then finish with a quick pressure release.
- Carefully remove the lid and fluff the rice with a fork. Spoon the rice into a serving bowl.
