How to Make Creamy Citrus Ginger Salad Dressing
In a large bowl, measuring cup, or storage container, combine all of the dressing ingredients. Whisk well to combine until smooth.

Ingredients
- 4 cups spring mix
- 2 cups cooked rice noodles
- 1 cup cucumbers
- 1 cup broccoli
- 1 cup sugar snap peas
- 1 cup sliced bell peppers
- 1 cup carrots
- 8 ounce can mandarin oranges, drained
- 4 Tablespoons slivered almonds
- 1/4 cup crispy wonton strips
Creamy Ginger Dressing
- 2 ounces non fat plain greek yogurt
- 4 ounces orange juice
- 1 Tablespoon lemon juice
- 1 Tablespoon avocado oil
- 1 teaspoon minced garlic
- 1 teaspoon ground ginger
- 1 teaspoon sugar
- 1 teaspoon poppy seeds
- 1 teaspoon salt & pepper
Instructions
- Prepare the dressing by whisking together all the dressing ingredients until smooth.
- Add the spring mix, rice noodles, cucumbers, snap peas, bell peppers, carrots, and mandarin oranges and toss to a large bowl.
- Toss the salad with the creamy ginger dressing until coated.
- Serve with slivered almonds and crispy wonton strips and enjoy!
