Wild Alaskan Salmon
I was fortunate enough to go to Alaska this summer and fish for Wild Salmon! We caught nearly 100 salmon and paid to have them shipped home. Let me tell you, it was well worth it! This salmon is so amazingly fresh and it has such a good flavor!
Alaskan salmon is a rich source of a variety of vitamins and minerals, as well as lean protein and omega-3 fatty acids. Also known as chinook, king or sockeye salmon, Alaskan salmon is healthiest when caught in the wild.
For this recipe, you can use any salmon fillet that you want. I looked and you can find Wild Alaskan Salmon at Costco!
Butternut Squash
Butternut squash is such a fun, seasonal vegetable! I love using butternut squash in my cooking because it has a delicious, unique flavor. It’s also a very healthy vegetable! Butternut squash is low in calories but high in many nutrients, including vitamin A, vitamin C, magnesium, and potassium.
You can buy butternut squash as a whole squash, or you can buy precut cubes at Costco, Trader Joes, or Sprouts to name a few. I would recommend spending the extra dollars and buying the precut stuff. You can prep the squash yourself, totally, but it is time consuming. You decide!
Roasted Vegetables
One of my very favorite way to cook vegetables is to roast them in the oven. Roasting veggies brings out such a delicious flavor! I actually love a little char on broccoli and on squash. With this recipe, the seasonings help compliment the charred vegetables in a beautiful way!
I always say, when we add color to our food, we are adding flavor! Roasting, charring, and baking veggies adds such a delicious flavor.

Baked Salmon with Roasted Butternut Squash & Broccoli
Easy oven Baked Salmon with Roasted Butternut Squash & Broccoli! A delicious, healthy meal the whole family will love!
Ingredients
- 1 Salmon Fillet- about 2-3 pounds
- 1 butternut squash, cubed
- 2 cups broccoli, cut into smaller pieces
- 2 tablespoons olive oil
- 2 tablespoons Italian seasoning
- 2 teaspoons garlic powder
- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- For the Salmon
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- 1/2 teaspoon Italian seasoning
- 1 lemon, zested and juiced
Instructions
- Preheat oven to 425.
- Line a baking sheet with foil.
- Peel and cube butternut squash, if needed.
- In a small bowl, toss butternut squash and broccoli in olive oil, Italian seasoning, garlic powder, salt and pepper.
- Dump the coated veggies out onto the baking sheet, arranging them into a single layer.
- Roast in the oven for 30 minutes.
- In the meantime, prepare the salmon.
- Remove any small bones from the fillet if needed.
- Season the fillet with salt, lemon pepper, Italian seasoning, lemon zest, and lemon juice.
- When the 30 minutes is up on the veggies, remove from oven. Reduce heat to 350.
- Place the salmon fillet right on top of the veggies, skin side down, and return to the pan to the oven.
- Bake for 10-12 minutes, or until the salmon is baked through. Be careful not to over cook!
- Serve hot. Best served over a bed of quinoa.
Notes
*If you don't want the broccoli charred, add the broccoli florets to the pan when you add the salmon!
