Healthy Baked Oatmeal
Baked oatmeal is the best! I love it because it’s an easy way to prep a week’s worth of breakfast in one pan. The banana helps to naturally sweeten these oatmeal bars and the oats make it hearty.
Plus, oatmeal has tons of health benefits such as weight loss, lower blood sugar levels, and a reduced risk of heart disease.
With a newborn in my house, every day looks a little different. But, I’ve found that if I don’t prioritize food and have healthy items prepared in my fridge, I tend to make poor food choices. Food is fuel and I need all the energy I can muster up these days.
Plus, oats are great for breastfeeding mamas! It’s known to help boost your milk supply too!

Here’s what you’ll need for this oatmeal bake:
- 4 cups rolled oats
- 2 cups mashed banana (roughly 4 ripe bananas)
- 1/2 cup milk
- 1 teaspoon salt
- 1/4 cup pure maple syrup, agave, or honey
- 1 teaspoon vanilla extract
- 3/4 cup chocolate chips

Banana Baked Oatmeal
This banana-baked oatmeal is the perfect make-ahead breakfast to have prepped and ready to go in the fridge!
Ingredients
- 4 cups rolled oats
- 2 cups mashed banana (roughly 4 ripe bananas)
- 1/2 cup milk
- 1 teaspoon salt
- 1/4 cup pure maple syrup, agave, or honey
- 1 teaspoon vanilla extract
- 3/4 cup chocolate chips
- Optional Topping: nut butter of choice
Instructions
- Preheat the oven to 350 F. Prepare a 9x13 inch pan and grease well.
- Stir all ingredients, then smooth into the pan. Sprinkle chocolate chips on top if desired.
- Bake for 20 minutes.
- Let the oatmeal bake cool before slicing it into bars. Leftovers can be refrigerated for 3-4 days.
- Pro Tip: warm each slice before serving and drizzle with your nut butter of choice. Yum!
