•1 cup whole milk
•2 egg yolks
•1 teaspoon vanilla

•1 Tablespoon sugar in the raw

Banana bread is a known favorite in the Hawaiian islands, so I thought, why not lean into the tropical flavors?
The coconut syrup pairs beautifully with the flavors in the banana bread too! Add some sliced bananas and macadamia nuts and you will be in for a treat!
You could also use regular maple syrup and fresh berries if you prefer. That would be delicious as well.
Tips for Making the Best French Toast
- Add vanilla and cinnamon to your custard mix!
- After each slice is dipped in custard, add a sprinkle of sugar in the raw before cooking to give it a nice crust.
- Butter the griddle before cooking.
- Let each slice cook for a few minutes on each side. You don’t want to risk the banana bread breaking or falling apart.
- Be gentle when flipping. Again, we don’t want the slices falling apart.
- Use leftover or day-old banana bread if you can. It will be sturdier and hold up the custard better.

Banana Bread French Toast
Give this delicious, over-the-top brunch! Inspired by island flavors, this Banana Bread French Toast will take you to the tropics.
Ingredients
- •7-8 slices banana bread
- •1 cup whole milk
- •2 egg yolks
- •1 teaspoon vanilla
- •1 teaspoon cinnamon
- •1 Tablespoon sugar in the raw
Instructions
- In a medium bowl, whisk together the egg yolks, milk, vanilla, and cinnamon. Pour into a shallow baking dish.
- Slice the banana bread about ¾ inch thick and lay it in the custard.
- Allow to soak for 1 minute, flip the slices over, and let the other side soak for 1 more minute. Sprinkle a little sugar in the raw on each piece before placing it on the griddle.
- Heat a large skillet or griddle over medium heat. Once hot, add a bit of butter to the skillet and cook 2 or 3 slices of banana bread for about 3 minutes per side, until golden brown, firm, and cooked through.
- Serve warm, with coconut syrup, sliced bananas, and macadamia nuts.
