If you know me, you know that my two favorite salads are BBQ chicken and Asian style salads! I am very picky about my BBQ chicken salads. The chicken has to be hot, it can’t have any olives, and it has to be a good ranch, no fancy chipotle ranch or cilantro ranch, just pure ranch. I am so picky about how I like it, I decided to develop a recipe exactly how I want it! It is the perfect combination of sweet, tangy, and delicious!! Come see how I make it.
One place I know that they do bbq chicken right is at Rumbi! They keep the chicken hot, there are no olives, and they have a great ranch! They also add tortilla strips to there’s which I don’t love, but it is easy to order them without. They also give you a large portion when you order a salad there, which is awesome! If you are a BBQ chicken salad fan like me, you will love this recipe! I make my own BBQ sauce that takes this salad to a whole new level. Of course if you have a favorite sauce that you buy at the store, you can use that one too. But, if you don’t, try this recipe and you’ll never buy store bought sauce again! You will not be disappointed!!
BBQ Chicken Salad
3-4 chicken breasts
1 bag romaine lettuce blend
1 cucumber
1 cup shredded carrots
1 cup shredded cheese
2 bell peppers, chopped
1 cup corn
1 cup celery
1 cup halved cherry tomatos
1 can black beans, rinsed
3 green onions, chopped
Prepare chicken. I cook mine in my Instapot on meat for 24 minutes. I add 1/2 cup of water and 1 cup homemade BBQ sauce and let the pressure cooker do it’s thing.
Meanwhile, prepare all vegetables. Chop celery, bell peppers, cherry tomatoes, green onions, and cucumbers. Rinse black beans and corn if using canned. Shred carrots, I shred mine in my Cuisinart food processor with the shred attachment.
When chicken is finished, top salad with all ingredients, chicken, BBQ sauce and Ranch.
Homemade BBQ Sauce
1 tablespoon canola oil
2 teaspoons garlic paste
1/2 white onion, diced
1 cup ketchup
1/3 cup molasses
1/3 cup brown sugar
3-4 tablespoons white vinegar
1 tablespoon Worcestershire sauce
Dash of Salt
In a saucepan, add oil, garlic paste, and onion. Cook for 5 minutes on medium heat, softening the onion. Reduce heat to low and add in ketchup, molasses, brown sugar, vinegar, Worcestershire sauce, and salt. Simmer for 20 minutes. Taste after simmering and add any additional ingredients you feel it needs.
