Easy dinner idea! These BBQ Chicken Stuffed Sweet Potatoes are easy, delicious and healthy lunch or dinner recipe with only a handful of ingredients. Simply cook up some sweet potatoes in the oven, instant pot, or air fryer, then top with cooked shredded bbq chicken, red onions, and cilantro! Bam, dinner done! Make it with me!
Stuffed Sweet Potatoes
If you have never tried stuffed sweet potatoes, you are in for a treat! They are so simple and easy to make, and really the options are endless.
This recipe is one of my favorites, BBQ chicken stuffed sweet potatoes because it is one that the whole family will love. I know it may seem strange, but the sweet potato and BBQ chicken pair so well together!
All you need for this recipe is a 2 chicken breasts, a jar of your favorite bbq sauce, 4 sweet potatoes, red onion, cilantro, olive oil, and salt & pepper. That’s it!
How to prepare the BBQ Chicken?
My favorite way to cook up the BBQ chicken for this recipe is in the Instant Pot! The instant pot makes cooking chicken a breeze!
Simply add the two chicken breasts to the bottom of your pot. Season them with salt and pepper. Add 1/2 cup of water to the instant pot, and top the chicken with 1/2 the jar of BBQ sauce.
Lock the lid, set the valve to seal, and manually set the timer for 25 minutes. The pot will display “ON” for 10 minutes while it comes to pressure, then it will count down from 25.
When the timer sounds, quick release the pressure by moving the valve on top from “seal” to “vent” and remove the lid. Shred the chicken in the sauce, then use as desired.
Preparing Sweet Potatoes in the Air Fryer?
Since I like to use my Instant Pot to make my BBQ chicken, I have found a way to use my air fryer to make my baked sweet potatoes! And, it’s so easy!
- Pierce sweet potatoes several times with a small knife or fork.
- Drizzle olive oil over clean sweet potatoes and rub into potatoes with your hands to coat. Sprinkle with salt and pepper.
- Place sweet potatoes on air fryer rack or basket, making sure to leave some space between them and not stacking them.
- Cook at 385 degrees for 40-50 minutes (depending on the size of your sweet potatoes), flipping over halfway through the cooking time.
For best results, use sweet potatoes that are similar in size for even baking.
Preparing Sweet Potatoes in the Instant Pot?
- Scrub the skin of sweet potatoes with a brush until clean. Pour 1/2 cup of water into Instant Pot. Place a steamer basket or trivet in the bottom of the Instant Pot. Place sweet potatoes on top of/inside steamer basket or trivet.
- Secure the lid and turn the valve to seal.
- Use the manual mode of Instant Pot and set to pressure cook on high for 15 minutes.
- Quick-release the pressure by turning the valve from seal to vet and, remove the lid. Serve immediately.

BBQ Chicken Marinade
Ingredients
- 1 pound chicken breasts
- 1/4 cup avocado oil
- 1/4 cup BBQ sauce of choice
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Add all the ingredients to a gallon-sized liplock baggie.
- Marinate in the fridge for a minimum of 30 minutes, to overnight.
- Cook chicken by dumping the bag and its marinade in the instant pot or crockpot and bake until fully cooked and ready to shred. (IP: manual for 20 minutes CP: high for 4-6 hours)
- Serve over a baked sweet potato and top with diced red onion, cilantro, mozzarella cheese, and additional BBQ sauce.
Notes
To prep the sweet potatoes in the Instant Pot: clean and poke the sweet potato skins with a fork. Wrap in tinfoil and add the prepared sweet potatoes to the instant pot on the trivet or in the steamer basket with half a cup of water. Lock the lid, set the valve to seal, and manually set the timer for 15 minutes. When finished, quick release the pressure and enjoy it.
To prep the sweet potatoes in the Oven: preheat oven to 400. Bake sweet potatoes for 50- 60 minutes, or until insides feel soft and enjoy.
