Beets are so good for you! I don’t like beets out of the can because of the liquid they are soaked in. I make my own homemade beets in my Instant Pot and it is so easy and simple! Beet, Feta, and Avocado Spinach Salad with Sweet Ginger Dressing
Yields 4 servings
4 cups spinach
3 beets
1 avocado, cubed
1 cup raw almonds
1 cup feta cheese
1 8 ounce can mandarin oranges
2 cups cooked spaghetti (optional)
Sweet Ginger Dressing
1/4 cup canola oil
1/2 cup sugar
1/2 cup rice vinegar
1/4 teaspoon pepper
1/4 teaspoon ginger
2 teaspoons Mrs Dash seasoning
To prepare the beets:
Remove the stems of the beets on both ends. Wash thoroughly. Place beets in instant pot with 1/2 cup of water. Set the value to seal and manually set the timer for 12 minutes. When finished cooking, remove from instant pot and peel. The peel will be easy to remove. I recommend using gloves because the beets will stain your hands. Quarter into bite sized servings and add to salad.
For the salad:
Place the spinach, beets, avocado, almonds, cheese, mandarin oranges, and optional spaghetti noodles in a bowl. Toss salad and mix well. Top with dressing and serve.
For the dressing:
Mix together oil, sugar, rice vinegar, pepper, ginger, and Mrs. Dash seasoning and a small bowl. Pour into a air tight container and save in refrigerator until ready to use.
