The best avocado toast is creamy, crisp and so satisfying. It’s a delicious and simple breakfast, snack, or light meal! There are a lot of different ways to make avocado and egg toast, but I think this recipe is my favorite! A creamy avocado base with salt, ricotta cheese, an over-easy egg, everything but the bagel seasoning, arugula, and a little hot sauce! It’s best consumed immediately, since the avocado browns over time. Make it with me!
How to Make the Best Avocado Toast
- Pick great avocados: You want ripe but not over-ripe avocados. Look for avocados that yield a bit to a gentle squeeze, but avoid using avocados that are mushy or stringy on the inside.
- Buy good bread and toast it well. I think sturdy, thick-sliced, sourdough bread make the best avocado toast. Golden, well-toasted bread offers a sturdy base and a crisp, shattering contrast against the creamy avocado.
- Mash your avocado. I prefer a mashed avocado than sliced on my breakfast avocado toast.
- Don’t forget the salt. You’ll want to top a pinch of salt per avocado half. Bonus points? Finish your avocado toast with a light sprinkle too.
- Get creative with toppings. Here are some toast ideas. Add egg, cheese, greens, hot sauce, and seasonings all bode well with avocado toast! Add what you like!
Avocado Toast Recipe with Egg
As you can see in my pictures, I added an over-easy egg on top! I like adding egg because it gives the meal a little extra protein and a little more substance.
Avocado and egg toast are very popular and making it at home is very easy to do.

Topping Options
Though the variations of toast are endless, here are some ideas and inspiration for you to try:
- Toast with mozzarella, tomatoes, basil , and balsamic glaze.
- Loaded Toast with a boiled egg, bacon and tomato.
- Toast wiith smoked salmon, red onion, and cucumbers.
- A sweet option could be mango slices, or other fresh fruit and a drizzle of honey.
- Pesto sauce with mozzarella cheese.

Best Avocado Toast
Avocado toast is creamy, crisp and so satisfying. It’s a delicious and simple breakfast, snack, or light meal!
Ingredients
- 1 slice of bread, I like sourdough
- ½ ripe avocado
- Pinch of salt
- 1/4 cup ricotta cheese
- 1/4 cup arugula
- 1 over easy egg
- 1 teaspoon everything but the bagel seasoning
- A couple of drops of hot sauce
Instructions
- Toast your slice of bread until golden and firm.
- Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. Mix in a pinch of salt (about ⅛ teaspoon) and add more to taste, if desired.
- Spread avocado on top of your toast. Layer on ricotta, arugula, egg, everything seasoning, and finish with hot sauce. Enjoy!
