- 2 pounds skirt or flank steak
- 1/4 cup olive oil
- 1/4 cup orange juice
- 2 Tablespoons lime juice
- 1/4 cup fresh cilantro or 2 Tablespoons dried cilantro
- 1 teaspoon oregano, dried
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon paprika

How Long to Marinate Beef Flank Steak
You will want to marinate your flank steak for at least two hours. Up to eight hours is great, but I wouldn’t let it sit any longer than that.
If you are short on time, even just 30 minutes will help bring a delicious flavor to your flank steak.
But I recommend at least two hours in the fridge.
Simply mix together all the marinade for the flank steak ingredients and place it in a bowl or a ziplock bag in the fridge.
Cooking Flank Steak
After the meat has been marinated, you’ll want to season it with additional salt and pepper before cooking.
My preferred way of cooking this flank steak is on the grill. Throw it on a hot grill and cook both sides until the internal temperature is to your preferred doneness.
If you are wondering how to cut flank steak, you’ll want to cut it against the grain in thin strips with a sharp knife. This ensures tenderness with each bite!
I like to serve this recipe up as flank steak tacos with corn tortillas, guacamole, pickled red onions, and crunchy slaw.

This is the best flank steak marinade recipe! It results in tender, flavorful, and juicy bites of meat.
Ingredients
- ¼ cup olive oil
- ¼ cup orange juice
- 2 Tablespoons lime juice
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ¼ cup chopped cilantro or 2 Tablespoons dried cilantro
- 2 pounds skirt or flank steak
Instructions
- In a large ziplock bag or a large mixing bowl, add all the ingredients except the steak and toss to combine.
- Add the steak and toss with marinade to coat.
- Seal the bag or cover and marinate in the fridge for 2 to 8 hours.
- Remove the meat from the marinade. Season both sides of the steak with salt and pepper.
- Grill or cook to your desired internal temperature.
