How This Broccoli Chicken and Noodle Casserole Came To Be
One night, I didn’t have much direction for what I was making for dinner. I had the ingredients in the recipe below in my pantry and fridge and needed something quick.
I started mixing things together in a large pot on the stovetop. As I kept cooking, I added some small pasta noodles and baked them in the oven to make this soup-like recipe more of a casserole.
I added the noodles, the chicken, and some extra cheese and baked it until it was golden brown and bubbly.
The result? Delicious! Fast, simple, one bowl, and ready in under an hour. Even my toddler loved it! I’d call that a dinner win.

What You Need to Make Broccoli Casserole
- 1 Tablespoon extra virgin olive oil
- 2 Tablespoons butter
- 1 yellow onion, chopped
- 1 cup shredded carrots
- One teaspoon of garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- One teaspoon of poultry seasoning
- 2 cups shredded or chopped cooked chicken
- 2 1/2 cups low sodium chicken broth
- 1 1/2 cups milk
- 1 cup ditalini pasta
- 3 cups broccoli florets, roughly chopped
- 1/3 cup grated Parmesan cheese
- 1 1/2 cups shredded cheddar cheese
How To Make Broccoli Chicken and Noodle Casserole
- Preheat the oven to 400° F.
- Heat the olive oil in a large oven-safe pot over medium heat. Add the onion and carrot and cook until fragrant, about 5 minutes.
- Add butter, garlic powder, salt, pepper, poultry seasoning, and chicken.
- Add the broth and milk. Bring to a gentle boil over medium heat. Add the pasta and broccoli. Stir frequently until the pasta is al dente and the broth has been absorbed, about 8-10 minutes.
- Stir in 1 cup of cheese. Then, top the casserole with the remaining cheese.
- Bake for 20 minutes, until the cheese is melted and everything is golden brown. Enjoy!
