Easy Broccoli Salad
This Easy Broccoli Salad recipe is great to feed a crowd! It is also easy to cut down or double the recipe as needed. The thing with this salad that I find is every recipe makes the mayo dressing look thick and heavy.
It almost looks caked on and it tastes like mayo. In my recipe, I tried to keep the dressing lighter, while staying true to the traditional broccoli salad recipe.
How I Improvised This Recipe
Funny story about making this recipe the first time. I did not have any crasins to put in the salad, I had forgotten them from the store. Rather than driving down the hill and to the store again, I chose to improvise.
I found a trail mix in the pantry that had crasins mixed into it. Yes, exactly what you are thinking, I dumped out the trail mix and picked out the craisins to use in the salad. They were pretty salty from the trail mix, so I did not salt the rest of the recipe.
I felt like I was on an episode of cut throat kitchen. I loved it.

mayo
Plain greek yogurt
white sugar
red wine vinegar

Easy Broccoli Salad
Broccoli salad is a combination of broccoli, bacon, red onion, cranberries, and sunflower seeds. It’s topped with a creamy mayonnaise yogurt dressing. So easy, healthy and delicious!
Ingredients
- 1 pound fresh broccoli (chopped into small florets)
- 1 red onion (chopped)
- 8 strips bacon (cooked crisp and crumbled)
- 1/2 cup sunflower seeds
- 3/4 cup Craisins
For the Dressing
- 1/2 cup light mayo
- 1/2 cup plain greek yogurt
- 2 tablespoons red wine vinegar
- 1/2 cup sugar
- 1/2 teaspoon salt
Instructions
- In a large bowl combine broccoli, onion, bacon, sunflower seeds, and Craisins.
- Toss in the salad dressing and refrigerate for 30 minutes or until serving.
Salad dressing:
- Mix the mayonnaise, red wine vinegar, sugar, and salt together. Stir until the sugar begins to dissolve.
- Pour dressing over broccoli salad and stir to coat.
Notes
*Allowing this recipe to set up in the fridge for 30+ minutes is recommended but not required. The flavors will incorporate better if you do.
