I am excited to see who Nick ends up with, I don’t know who is going to win, and I have the best party food for you to take to share! Who doesn’t love a nice, crispy, warm baked bruschetta? I know I do!
Bruschetta can be made in so many ways, you can keep it simple with just tomatoes and olive oil. I decided to get fancy with this recipe and make it a Caprese Bruschetta. This means it has the mozzarella, tomatoes, and basil you are promised when you order a caprese salad! It is the perfect blend of cheesy, flavorful, goodness. I topped mine off with a little balsamic vinaigrette. This recipe is perfectly crowd pleasing and it is a great finger food to share! Try it for your next event!
Capresa Bruschetta
Serves 12
Total Time: 20 mintutes
Toasted Bread:
1 loaf French Bread
1 tablespoon squeezable garlic
1 tablespoon Olive Oil
Capresa Topping:
5 Roma Tomatoes
¼ Red Onion
1 cup chopped Basil
1 tablespoon Olive Oil
½ teaspoon Italian Seasoning
½ teaspoon salt & pepper
6 slices mozzarella cheese, halved
Shredded parmesan cheese
Balsamic Vinaigrette
Preheat oven to 400. Slice bread into ½ inch thick cuts. Mix together olive oil and garlic and brush tops of bread slices. Bake for 7-9 minutes or until golden and crispy.
Dice tomatoes, discarding the inside seeds and juices and just using the thick outer part. Finely chop red onion and basil and add to tomatoes. Add olive oil, Italian seasoning, and salt and pepper. Mix well.
Turn oven to broil. Place mozzarella cheese slices on top of toasted bread. Top with tomato mix and extra basil slices. Grate parmesan cheese over top of each slice. Broil for 1 minute at a time, don’t go far or it will burn.
Serve warm, top with balsamic vinaigrette, and enjoy!
