Caramel Apple Donuts

Caramel Apples are so popular this time of year! I love the delicious flavor combination it creates! These Caramel Apple Donuts bring the essence of the caramel apple to life in donut form! They are an easy baked donut, that turn out delicious every time! Made with fresh chunks of green apple, spices, and a soft caramel topping. All I can say is YUM! Make it with me!

Caramel Apples are totally my jam! I love the bite of apple crunch with the soft caramel coating. I wanted to turn that flavor combination into a baked donut recipe. And let me tell you, I love how these turned out! The donut is soft, light, and flavorful, and the caramel glaze really ties everything together! I love it and I think you’ll love it to!

Caramel Apple Donuts
Yields 12-15

2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
2 1/4 teaspoons cinnamon , ground
1/4 teaspoon nutmeg , ground
1/4 cup unsalted butter , melted
1 large egg
1/2 cup granulated sugar
1/4 cup buttermilk
1/2 cup unsweetened apple sauce
3/4 cup green apple , peeled and grated (about 2 medium)

Caramel Topping
11/2 cups melted Peter’s Caramel

Preheat oven to 375°F.
In a large bowl whisk together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
In another bowl, stir together melted butter, eggs, sugar, buttermilk and applesauce, stir in fresh apple.
Add flour and stir until just combined.
Spoon batter into a large gallon ziplock bag, seal and snip the corner off one end.
Squeeze mixture into the cavities of a donut pan lightly sprayed with non-stick baking spray. Fill each cavity ¾ way full.
Bake for 12 to 14 minutes, until tops of the donuts spring back slightly when touched, and bottoms of donuts are a light golden brown.
Let cool 5 minutes before removing from pan.
Melt Peter’s Caramel in saucepan over low heat until smooth.
Dip each cooled donut into the caramel sauce, about halfway, shaking off any excess caramel.
Transfer to a cooling rack and top with peanuts; repeat with remaining donuts.

lemon-lime soda
lime juice
garlic cloves, minced
boneless skinless chicken breast halves
chili lime seasoning- I buy this at Trader Joe’s- you could also use chili powder
salt
pepper

CORN SALSA

corn
mango, diced
avocado, diced
green pepper, diced
jalapeno, diced
red onion, diced
cilantro
lime, juiced
Optional: cotija
CILANTRO LIME CREMA

plain greek yogurt
lime, juiced
cilantro

1/2 stick (1/4 cup) butter, softened
1/3 cup granulated sugar
1 egg
3/4 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/2 cup buttermilk
1 cup cake flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Fluffy whipping cream at home 🤍🤍🤍 1 cup Fluffy whipping cream at home 🤍🤍🤍

1 cup (220g) whipping cream (cold, use straight from fridge)
1/4 cup (35g) powdered sugar
1 tsp vanilla extract
1/4 tsp cream of tartar

In the bowl of a stand mixer or large mixing bowl if using a hand mixer, add the whipping cream. Attach the whisk attachment.
Whisk the mixture at medium-high speed. After about 2 minutes, it should start to get frothy and foamy, add in the powdered sugar and cream of tartar and continue whisking for about 1-2 more minutes. Add the vanilla. 
At this point, medium peaks should be forming. Medium peaks will partially fall over. Stop here if you want that glossy dollop on a piece of pie, etc. If you want to pipe this, continue whisking for about another minute until stiff peaks form.

Use for any and all desserts and toppings and enjoy!!

Where my recipe differs is in the dressing. The sauce that coats it all before you chill it and serve.

I like to add whipped whipping cream to the dressing to make it light, airy, and even a little bit fluffy.

Here’s the thing, I don’t sweeten my whipping cream. I simply whip it up with beaters, add the whipped cream to the other ingredients and fold it in gently. Try it!

The Spring Festival is happening now till May 10th at @crosseranch just North of SLC!!

THE BABIES: All the baby animals: Bunnies, chicks, calves, goats, piglets, lambs, foal, and a mini donkey!
And, yes, you can get up close and personal with them!

THE FUN: They also have all the various activities around the farm! They have a barrel train, ziplines, ropes course, mega slides, pony rides, kiddie corral, jump pads, hay ride, Lego blocks, fire pits, and more.

THE FOOD! I love their apple cider donuts, but new this year is a rotating weekly new flavor! The cherry almond vanilla cake donut blew us all away!
