This recipe is for my savory Cheddar Zucchini Bread and let me tell you, it’s delicious! This quick bread comes together in no time, and it bakes up perfectly! It’s filled with shredded cheddar cheese, garlic, and shredded zucchini. Make it with me!

Zucchini really is such a versatile vegetable! Think of all the things you can make with zucchini!
You can use a vegetable spiralizer and turn them into zoodles! They can then be used as a substitute for pasta!
You can also chop them up into sticks and turn them into zucchini fries!
You also can hollow them out and make them zucchini boats!
Like this recipe, you can shred the zucchini up and make a savory cheesy bread loaf, or a chocolate sweet loaf.

What You Need to make Cheddar Zucchini Loaf
- 3 cups all-purpose flour
- 4 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- ¾ cup shredded zucchini
- 2 teaspoons minced garlic
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1 cup milk
- 8 tablespoons butter, melted
What is the easiest way to shred zucchini?
I have found that it’s easiest to shred up zucchini with a box grater! Yes, I do it by hand, but for me, it works!
For this cheddar zucchini bread, after I shred it, I like to squeeze out as much water as I can before adding it to the dough.

Cheddar Zucchini Bread
The most delicious savory Cheddar Zucchini Bread is made with shredded zucchini, cheddar cheese, and garlic! It's soft and buttery and a win!
Ingredients
- 3 cups all-purpose flour
- 4 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- ¾ cup shredded zucchini
- 2 teaspoons minced garlic
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1 cup milk
- 8 tablespoons butter, melted
Instructions
- Preheat oven to 350˚F. Spray a loaf pan (9×5 inch) with nonstick spray.
- In a large bowl, combine flour, baking powder, salt, and baking soda. Stir to combine.
- Add zucchini, garlic, cheese, eggs, milk, and butter to dry mixture and fold together until completely mixed and a sticky dough is formed.
- Pour dough into the prepared pan and smooth with a spatula or back of a spoon.
- Bake uncovered for 50 minutes or until golden and toothpick inserted in the middle comes out clean.
- Top with additional shredded cheese if desired and enjoy!
