CHEWY PUMPKIN COOKIES

But, this year, I wanted to create a CHEWY pumpkin cookie. You know, crispy on the outside, soft on the inside… like a classic chocolate chip cookie! So, I started playing around with different ingredients! I am happy to report that I created the perfect chewy pumpkin cookie! But I didn’t stop there!!
Cinnamon Chips!!
What flavor best compliments pumpkin? Cinnamon! In my opinion, cinnamon works beautifully with pumpkin! Pumpkin spice is made with a blend of cinnamon, nutmeg, and cloves.
I found these Hershey cinnamon chips at Orson Gygi and I knew they would be the perfect addition to these cookies! I was right!
You can use regular milk chocolate chips if that’s what you have on hand! The cookies will still be delicious, I promise! But the cinnamon chips are a real treat! Orson Gygi stocks them year round, but sometimes you can find them at Kroger and Harmons!

Chewy Cinnamon Chip Pumpkin Cookies
These are the perfect Chewy Cinnamon Chip Pumpkin Cookies! The real treat are the cinnamon chips!
Ingredients
- 1 cup butter, room temperature
- 1 cup + 2 tablespoons dark brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla
- 1/2 cup pumpkin puree
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons pumpkin spice
- 1/2 teaspoon salt
- 2 cups cinnamon chips
Instructions
- Preheat oven to 375 degrees. Line 2 large baking sheets with parchment paper; set aside.
- In a stand mixer with a paddle attachment, beat the butter until smooth—about 1 minute. Add the sugars and vanilla and beat on medium speed until light and fluffy. Add the pumpkin puree and beat until it's just combined.
- Next, add the flour, baking soda, pumpkin spice, and salt. Mix at a low speed until incorporated.
- Fold in cinnamon chips.
- Scoop cookie dough out and place it on parchment paper using a cookie scoop.
- Place baking sheets in preheated oven and bake for 10-12 minutes, or until golden at the edges and set in the middle.
- Allow cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
- Store in an airtight container.
Notes
You can substitute chocolate chips for cinnamon chips if desired.
This recipe doesn't call for an egg. That is not a typo.
