This chicken spring roll recipe is unbelievably easy to make, delicious, and healthy! I like to pack them with lots of veggies and usually an added protein and serve them with homemade peanut sauce for dipping. They make a great light lunch, dinner, or appetizer. Chicken Spring Rolls Recipe
My recipe for chicken spring rolls could not be easier! You only need a handful of fresh ingredients, rice paper wraps, and protein of your choice.
In this case, I am using teriyaki chicken. You could also use shrimp, tofu, or make it a veg spring roll recipe.
The thing I love about homemade spring rolls is that they taste incredibly fresh! This recipe is totally customizable, extremely forgiving, and easy to adapt to use ingredients that you like and have on hand. I’m sharing what I typically put in them, but the spring roll filling ideas really are endless.
HOW TO MAKE FRESH SPRING ROLLS:
Whats in a spring roll? Anything you want! That is why I love this recipe so much, it is completely customizable.
Making a fresh spring roll recipe is a simple step by step process. Let me teach you how to roll spring rolls in spring roll wrappers made from rice paper.
- Dip wrappers in water. Fill a large shallow dish with an inch or so of warm water. Remove one rice paper wrapper from the package, and place it in the water to soak. Allow it to soak for about 10 to 15 seconds and then remove and place on a cutting board or countertop. The rice wrapper should still feel pretty firm at this point. It will soften as it sits and as you add the filling ingredients.
- Add filling. Layer all the vegetables and protein into the 1/3 of the spring roll that is closest to you.
- Wrap. Pick up the sides of the spring roll and fold them in over the toppings. Then pick up the edge closest to you and pull it up and snugly over the toppings. Continue rolling all the way up like a burrito. Practice will make perfect, but just try to keep all of the ingredients tightly together as you roll everything up.
Chicken Spring Rolls With Peanut Sauce
In addition to what you decide to put inside your spring, you can also think about what you want to dip your spring roll in. One of the most common dipping sauces is peanut sauce.
Peanut Sauce is so good! And it pairs really well with a Thai chicken spring rolls recipe or a vegetable spring roll recipe.

Chicken Spring Roll
The most delicious chicken spring rolls made with fresh veggies and teriyaki chicken.
Ingredients
- 2 cups cooked teriyaki chicken
- 8 rice paper wrappers
- 1 cup slivered carrots
- 1 cup shredded red cabbage
- 1 cup shredded cabbage
- 1 cup sliced scallions
Instructions
- Heat 1 inch of water in a sheet pan. Slide 1 rice paper wrapper in the water to soften for 15 seconds. Gently remove it and place it on a smooth cutting board.
- Place a few carrots, avocado, cabbage, bamboo shoots, and scallions across the bottom third of the wrapper, leaving a 1-inch border.
- Top the vegetables with cooked teriyaki chicken.
- Gently roll the bottom 1 inch of the rice paper over the top of the chicken and pull in tightly to form a roll.
- Pull the sides in and roll the wrapper tightly around the vegetables and chicken.
- Repeat with remaining vegetables and chicken, refreshing the hot water as needed.
