What is Chipotle?
I am located in Utah, and we have a chain fast food restaurant called Chipotle. It is one of my favorite places to eat out because they use all fresh, never-frozen ingredients.
They are known for their flavorful proteins, burritos and burrito bowls, and tasty toppings. The guacamole is delicious but it always costs extra.
The burrito bowls are served up in these disposable oval bowls with the iconic plastic black fork. Grab both for the true, Chipotle vibe at home.
Although I love the convenience of stopping in to grab a quick bite, their menu seemed simple enough that I could recreate it at home.
By doing so, I saved a little money, and in turn, made more burrito bowls that I could eat as meal prep for lunches throughout the week!
Chipotle Chicken
Chipotle is known for its flavorful chipotle bowls. I often rotate between ordering steak and chicken. The chicken is always perfectly seasoned and grilled to perfection.
This recipe calls for chicken thighs, but you could also use breasts or tenderloins if preferred.
I’ve recreated their marinade at home to make a spot-on copycat version at home.
The best part? This marinade is simple to make and it only takes about an hour before you are ready to cook it up.

Chipotle Salsa and Toppings
Chipotle offers a wide variety of toppings at their restaurant, that are all fresh and flavorful too! You can build your tacos, burritos, salads, and bowls and cater them to your liking.
I’ve recreated their mild salsa, which is similar to pico de gallo, guacamole, and my personal favorite, the corn salsa. You can find all those recipes below.
They also offer toppings like black or pinto beans, cheese, sour cream, and lettuce, which are easy things to pick up at the grocery store and have on hand.
What You’ll Need to Make Chipotle Bowls at Home
The best part about these Chipotle Chicken Bowl recipes is that many of the ingredients are used in each of the recipes below. So, you don’t have to buy a ton of groceries to make a few different recipes, which I love!
Things like cilantro, lime, and jalapenos are used in almost every dish, making your grocery list a short one to shop for!

Chipotle Chicken Bowl
Tonight, stay in and build your own Chipotle Burrito Bowl with the copycat recipes you know and love. Fluffy rice, black beans, tender chicken, mild & corn salsa, and lots of guacamole.
Ingredients
Chipotle Chicken
- 2 pounds boneless, skinless chicken thighs
- 1 7.7 oz can chipotle adobo sauce *see note
- 2 garlic cloves
- 2 teaspoons cumin
- 1 teaspoons dried oregano
- 1/4 cup olive oil
- 1 lime, juiced
- 1 teaspoon salt & pepper
Cilantro Lime Rice
- 2 cups basmati rice
- 2 cups water
- 1 bay leaf
- 1 teaspoon salt
- 1 cup cilantro, chopped
- 1-2 lemons, juiced
- 1-2 limes, juiced
Mild Salsa
- 4 roma tomatoes, diced
- 1/2 red onion, diced
- 1 jalapeno, diced
- 2 limes, juiced
- 1/2 cup fresh cilantro, chopped
- 1 teaspoon salt
- 1 teaspoon sugar
Guacamole
- 2 ripe avocados
- 1 lime, juiced
- 2 Tablespoons chopped cilantro
- 1/4 cup diced red onion
- 1/2 jalapeno, diced
- 1/2 teaspoon salt
Corn Salsa
- 1 can sweet white corn
- 1/2 cup red onion, diced
- 2 jalapeno peppers, diced
- 1/4 cup cilantro, chopped
- 1 lemon, juiced
- 1 lime, juiced
- 1 teaspoon salt
Other Toppings
- black or pinto beans
- mozzarella cheese
- sour cream
- romaine lettuce
Instructions
Chipotle Chicken:
- Add the chicken, chipotle adobo sauce, garlic, cumin, oregano, oil, and lime juice to a gallon-sized ziplock bag. Marinate for 1 hour before cooking the chicken.
- Smoke, grill, or pan-sear until the internal temperature reaches 165 degrees.
Cilantro Lime Rice
- Add the basmati rice, water, salt, and bay leaf to the Instant Pot.
- Pressure cook for 10 minutes.
- Quickly release the pressure, then add the cilantro, lemon, and lime juice while the rice is still hot to allow it to absorb while it cools.
Mild Salsa
- Add all the ingredients to a bowl and mix well.
- Refrigerate until ready to serve
Guacamole
- Mash the avocado.
- Add the remaining ingredients to a bowl and mix well.
Corn Salsa
- Add all the ingredients to a bowl and mix well.
- Refrigerate until ready to serve

Notes
*If you can't find the canned chipotle adobo sauce, you can use 2-3 chipotle peppers in adobo sauce with 2 tablespoons of sauce from the can. Prepare the marinade in a blender or food processor before adding the chicken.
*For even easier guacamole, mash the avocado, then add a scoop or two of the prepared mild salsa and mix well.
