Copycat Cafe Rio Dressing
Cafe Rio is a local resturant here in Utah that is known for it’s delicious house made dressing. It’s a creamy tomatillo salad dressing that makes their salads over the top delicious!
The one issue is, it seems they never give you enough dressing to top those massive salads. I decided I wanted to figure out how to make this dressing at home.
I have been making a copycat tomatillo dressing at home for years now! It’s one of my favorite salad dressings, and it never gets old!
Once you have all your ingredients ready to go, all you need to do is throw everything in the blender and blend it until smooth! The whole recipe takes about 10 minutes to come together.
What You’ll Need
- Plain Greek Yogurt- you could also use sour cream
- Mayo
- Cilantro
- Tomatillos- you’ll find these at the grocery store! They look like green tomatoes and they have a leafy exterior you remove before using it.
- Jalapeno
- Garlic- cloves or minced garlic will work for this recipe
- Limes
- Green Onion
- Salt
Taco Salad
My favorite way to use this dressing is to make a taco salad at home. I typically just use all the veggies and lettuce that I have on hand, including peppers, avocado, tomatoes, and corn.
For a protein, I like to cook up some seasoned ground beef or my shredded sweet pork.
Then, all you need are chips, tortillas, and cheese to top it off. Of course, you’ll make this homemade Cilantro Tomatillo Salad Dressing and you’ll be all set!

Cilantro Tomatillo Salad Dressing
The most delicious creamy cilantro tomatillo salad dressing!
Ingredients
- 1 1/2 cups plain greek yogurt
- 1/2 cup mayo
- 1/2 bunch fresh cilantro washed, stems removed
- 3 tomatillos, washed thoroughly (remove outer paper-like skin)
- 1 green onion
- 1 garlic clove or 1 teaspoon garlic
- 1 jalapeno, seeded
- 2 limes, juiced
- Salt to taste
Instructions
- Place all the ingredients in the blender and blend until smooth.
- Store in an airtight container in the fridge for up to two weeks.
