Classic Lasagna
Yields 6 servings
1 pound ground beef or ground turkey
1/2 cup chopped onion
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 cans crushed tomatoes
8-ounce can tomato sauce
2 teaspoons brown sugar
1/2 lb dry lasagna noodles (about 9 lasagna noodles)
2 cups Ricotta cheese
4 cups Mozzarella cheese, grated , divided
1/2 cup freshly grated Parmesan cheese
2 eggs
2 tablespoons Italian Seasoning Blend
In a large skillet over medium-high heat, cook the ground meat, onion, garlic, and a pinch of salt and pepper.
Preheat the oven to 375 degrees.
Brown meat, and break into small pieces as it cooks. Drain any excess grease.
Stir in the tomato paste, basil, oregano, thyme, salt and pepper.
Cook over medium-high heat, stirring constantly, for about a minute, until the mixture smells fragrant.
Add the crushed tomatoes, tomato sauce, and brown sugar. Stir to combine.
Bring the sauce to a simmer and cook for 5-10 minutes
In a separate mixing bowl, combine Ricotta cheese, with 2 cups mozzarella cheese, parmesan cheese, eggs, and Italian Seasoning Blend.
In a 13x9x2-inch casserole or lasagna dish, ladle a cup of sauce and spread it over the bottom of the dish. Arrange one layer of lasagna noodles lengthwise over the sauce. Ladle a third of the remaining sauce over the noodles.
Sprinkle a layer of a third of the grated mozzarella on top of lasagna sauce. Add half of the ricotta mixture, by placing cheese dollops every couple inches.
Apply second layer of noodles, top it with half of the remaining sauce. Add half of the remaining Mozzarella, the remaining ricotta cheese, and another thin sprinkling of Parmesan.
Finish with another layer of noodles. Spread the remaining sauce over the top layer of noodles and sprinkle with the remaining Mozzarella cheese.
Cover with foil and bake at 375 degrees for 45-55 minutes or until it becomes bubbly and golden brown. Remove the foil for the final 15 minutes of cooking time.
