I have eaten this Corn & Avocado Garden Salad for lunch every day for the last week! I love making it with fresh corn, that I cut right off the cob! Pair that with crisp iceberg lettuce, tomatoes, avocado, and sunflower seeds! I top mine off with a delicious Buttermilk Ranch Dressing! Make it with me!
I highly recommend making this recipe using fresh corn on the cob! I cook mine in a boiling pot on the stovetop! Once it’s finished, I cut it off the cob and save it in an airtight container in the fridge! I like doing it this way over using frozen corn because I like the big chunks you get when you cut it off the cob yourself! I also just think it has a great flavor! YUM!
I top this salad with my homemade Buttermilk Ranch Dressing. It would also be delicious with a blue cheese, or a parmesan dressing! The dressing is what makes this salad, so pick a good one!!
Corn & Avocado Garden Salad
Yields 2 servings
2 cups chopped iceberg lettuce
1 cup corn kernels
1 tomato, diced
1 avocado, diced
1/2 cup parmesan cheese
1/4 cup sunflower seeds
Buttermilk Ranch Dressing
Place all the salad ingredients in a mixing bowl. Stir in Buttermilk Ranch Dressing and serve. Enjoy!
