Cowboy Caviar is the best chip dip! It’s simple and easy to throw together and always feeds a hungry crowd! I make mine with black beans, black-eyed peas, chickpeas, corn, peppers, tomato, avocado, and a delicious simple sauce that brings it all together. Enjoy with your favorite tortilla chips! What You’ll Need to make Cowboy Caviar
Cowboy Caviar is totally customizable! You can make it fit your taste buds and flavor profile!
Below is the recipe for what I have found is my favorite combination! But, I have also seen others add more, less, or totally different ingredients to their mix. It’s up to you!
I’ve seen people add sweet fruits to their cowboy caviar, like mango or peaches! You can also add some cheese if you like that. The sky is the limit with this one.
- 3 Roma tomatoes seeds removed, diced
- 2 ripe avocados diced
- ⅓ cup red onion diced
- 15 oz black beans rinsed and drained
- 15 oz black-eyed peas rinsed and drained
- 15 oz chickpeas rinsed and drained
- 1 ½ cups frozen sweet corn thawed
- 1 bell pepper diced
- 1 jalapeno pepper, seed removed, diced into very small pieces
- ⅓ cup Cilantro finely chopped
For the Dressing
- Juice of 3 limes
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2-3 Tablespoons taco seasoning
- 3 Tablespoons sugar
- 2 Tablespoons honey
- Salt + Pepper

Ingredients

- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2-3 Tablespoons taco seasoning
- 3 Tablespoons suagr
- 2 Tablespoons honey
- Salt & Pepper to taste
Instructions
- Combine all the ingredients together in a large bowl.
- Mix together the dressing ingredients and toss to coat.
- Refrigerate until ready to serve, and serve with chips
