Cornflake Breading
The thing about this recipe that makes it pop is the cornflake breading crust! Rather than using breadcrumbs, I opted for cornflakes and loved the results.
The Cornflakes give the fish a delicious crunch that adds so much to each bite.
It’s what makes this crispy lemon salmon unique and wonderful. Give it a try!
What You’ll Need to Make Crispy Salmon
- 2 salmon fillets
- 1 teaspoon seasoning salt
- 1 teaspoon lemon pepper
- 1/3 cup mayonnaise
- 1 lemon, halved and juiced
- 1 cup cornflakes
How to Make Crispy Lemon Salmon in the Air Fryer
- Preheat the air fryer to 385 degrees.
- Remove the salmon from any packaging and pat dry with paper towels—season with seasoning salt and lemon pepper.
- In a small bowl, combine the mayonnaise and half the lemon juice. Spread the mixture on top of the salmon fillets.
- Add the cornflakes to a small bowl and crush them gently into crumbs. Do not pulverize; you want some texture for the cornflakes. Sprinkle the cornflakes on top of the fish, completely covering the mayonnaise mixture.
- Place the fish in the air fryer basket. Bake for 8-12 minutes, depending upon the thickness of your fish and how you prefer it. Always use a thermometer for accurate cooking times.
- Remove the salmon from the air fryer and squeeze the remaining lemon juice over the top. Enjoy
