- Rotisserie or cooked chicken, cubed
- Apples
- Cucumbers
- Shredded Carrots
- Cashews
- Mayo
- Curry Powder
- Lime Juice
- Salt & Pepper
What’s Different About this Curry Chicken Salad?
Regular Chicken Salad recipes have mostly the same ingredients. You’ll have your chicken, grapes, celery, and almonds. Don’t get me wrong, I love a good chicken salad sandwich. This is my go-to recipe for the classic!
But sometimes, you just want to switch things up and try something new! That’s what this Curry Chicken Salad is all about!
The curry alone gives this recipe a fun, new flavor but I also love adding apples and cucumbers for added sweetness and crunch. I also love using cashews rather than almonds to compliment the curry flavor nicely.
It will be perfect for your next baby shower, bridal shower, or springtime event!
CAN I USE ROTISSERIE CHICKEN FOR THIS CHICKEN SALAD?
Absolutely, Yes!
If you don’t want to go through the process of cooking your own chicken breast or happen to have leftover rotisserie chicken, go ahead and chop it up and use it in this recipe.
You will want roughly two cups of cubed or shredded chicken for this recipe.
You could also use canned chicken if you don’t mind using canned ingredients too.

Curry Chicken Salad
Out of all the recipes I’ve made with curry, this Curry Chicken Salad might be my favorite. Fresh, flavorful, and totally delicious!
Ingredients
- 2 cups rotisserie or cooked chicken, cubed
- 1 apple, diced
- 1 cucumber, diced
- 1/2 cup shredded carrots
- 1/4 cup cashews
- 1/2 cup mayo
- 1-2 teaspoons curry powder
- 1/2 lime, juiced
- Salt & Pepper
Instructions
- Combine all the chicken salad ingredients in a large bowl and set aside.
- Add all the dressing ingredients to a medium bowl and whisk until combined.
- Pour the dressing over the salad ingredients and toss until the chicken is coated well. Add salt and pepper to taste.
- Serve in sliced ciabatta roll, croissants, with crackers, or on a bed of lettuce for a low-carb option. Garnish with more cashews if you desire!
