I wait until the crisp comes to room temperature, then I top it with vanilla ice cream to chill the fruit even more, until it’s cold, then I eat it! It’s got a delicious crunch from the topping, a nice blueberry flavor, and a creamy texture from the ice cream! It’s the perfect summer dessert!

Easy Blueberry Crisp
Yields 9 servings
2 cups blueberries
1 tablespoon corn starch
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup sugar
1 tablespoon lemon juice
For the topping:
1/2 cup flour
1/2 cup old fashioned oats
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup melted butter
In a mixing bowl, combine blueberries with corn starch, cinnamon, nutmeg, and sugar. Toss to coat.
Dump into a well greased 8×8 baking dish.
Prepare the topping. In a mixing bowl, combine flour, oats, sugar, cinnamon, and melted butter until almost a dough has formed. Spread evenly on top of the blueberries.
Bake at 350 for 30 minutes, or until crust is golden brown and fruit is bubbly.
Serve hot or room temperature with vanilla ice cream.
