Easy Cheesy Potato Casserole
The thing I love most about this casserole is how quick and easy it comes together! Really, you only need one large bowl and 45 minutes in the oven.
We love making this potato casserole on Sundays for Sunday dinner. It’s the perfect compliment to ham, steak, fish, roast, and really any meat dish!
I also like to serve this along side a vegetable or salad of sorts to make for a complete meal!

Cheesy Potato Ingredients
While the obvious ingredient is potatoes we add lots of cheddar cheese, sour cream, butter, soup, and green onions finish out this easy dish.
You can vary these ingredients to suit your taste or use what you have on hand.
- Cheese: I find that cheddar cheese produces the best sauce with the most flavor, especially if you use extra-sharp but a nice swiss or your fave cheese will work just fine!
- Potatoes: Almost any kind of potatoes will work for this recipe. I use country-style hash browned potatoes in this recipe.
- Greek Yogurt: Use plain Greek yogurt in this recipe. You could also use sour cream if you’d rather.
If you want to make your cheesy potato bake more of a one-pot meal, then go ahead and add a cup or two of diced ham to the mix and bake it. Delicious and so easy too!
Sauté The Onions First!
I always say this, but with ANY casserole dish like this one, if you are going to be adding onions to it and then baking it in the oven, you MUST cook your onions down first.
Simply do this by adding the amount of diced onion determined in the recipe to a frying pan with a little butter or oil. Allow the onions to cook on medium low heat until they become soft and translucent.
Then, add the cooked onion to the recipe and continue as directed.
If you don’t do this extra step and add the raw onions to your casserole, you risk the onions not cooking and getting a raw onion in every bite. Personally, that is the worst thing to me!
Taking the time to cook your onions down first helps to create a delicious and flavorful casserole, every time! No crunch or raw bites!
What You’ll Need
1 pkg. (30 oz.) ORE-IDA shredded hash brown potatoes
1 pkg. (8 oz.) KRAFT shredded cheddar cheese, divided
1 medium onion (chopped)
1/2 cup butter
1/2 cup flour
1 cup chicken broth
1 cup plain Greek yogurt
1/4 tsp. ground pepper
1/4 tsp salt

Cheesy potatoes will keep in the refrigerator for 2-3 days before baking. So make this dish extra easy by taking care of all the prep work the day before! Just pop them in the oven following the recipe and you are ready to enjoy.

Cheesy Potato Casserole
Ingredients
- 1 pkg. (30 oz.) ORE-IDA shredded hash brown potatoes
- 1 pkg. (8 oz.) KRAFT shredded cheddar cheese, divided
- 1 medium onion (chopped)
- 1/2 cup butter
- 1/2 cup flour
- 1 cup chicken broth
- 1 cup plain greek yogurt
- 1/4 tsp. ground pepper
- 1/4 tsp salt
Instructions
- Heat oven to 350°F.
- In large skillet on medium heat, and the onion and butter and cook for 3-4 minutes until onions are soft. Add the flour to skillet and stir with slotted spoon to make roux. Cook this mixture while continuously stirring for 1 minute. Remove from heat.
- Add 1 cup of chicken broth and 1 cup of plain greek yogurt to the pan and mix well.
- Combine the hash brown potatoes and the prepared creamy sauce in large bowl. Stir in 1/2 of the grated cheese, salt and pepper and mix well.
- Spoon the potato mixture into 9x9-inch baking dish sprayed with cooking spray.
- Cover with tin foil and bake 30 min. Uncover, sprinkle with remaining cheese and bake for an additional 5 minutes or until cheese is melted. Enjoy!
