- 2 Tablespoons butter
- 1/4 cup diced onion
- 6 eggs
- 1/4 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cooked bacon strips, diced
- 2 chicken apple sausage links, cubed
- 1 cup diced potatoes*
- 1/2 cup shredded cheese
- 1/4 cup cream cheese, cubed
- Chives

This recipe is entirely customizable! Feel free to double the recipe and bake it in a 9×13 dish to feed more people!
You can also change up the ingredients to your liking. One suggestion is doing one protein, either all bacon or sausage as the added protein.
You could add vegetables like jalapeno, bell peppers, or mushrooms.

How to Make Easy Overnight Breakfast Casserole
- On the stovetop, cook the onions in the butter until they are soft and translucent.
- Whisk together the eggs, milk, salt, and pepper until smooth.
- Add onions, bacon, sausage, potatoes, and cheese until combined.
- Pour into a greased 8×8 baking dish.
- Add the cream cheese cubes to the egg mixture and sprinkle with additional shredded cheese if desired.
- Cover with foil and refrigerate overnight.
- When ready to bake, preheat the oven to 350.
- Cook the breakfast casserole covered for 30 minutes. Remove the foil and cook for another 5-10 minutes, until golden brown on top.
- Garnish with chives, serve warm, and enjoy!

* I like buying the frozen diced hashbrowns and using a cup of those. You could also dice up a potato yourself, too.
