Not only are pickled radish super tasty and nutrient-rich, but it’s a useful topping for salads, mixing into larger entrees, avocado toast, tacos, burgers, or simply eating raw. Plus, pickled daikon radish is also a great source of gut-boosting probiotics. Fermented radishes can also be used in cold summer soups or as veggie crackers, with some added flavor like cheese or butter. Let me show you how to make these easy pickled radishes at home!
WHAT YOU’LL NEED
It only takes 10 minutes to pickle radishes at home! If you are thinking that you aren’t a fan of radishes so you won’t like them pickled, think again! Pickling this root vegetable completely changes its flavor.
The radishes lose their bitter bite and take on that perfect sweet, salty, sour pickled flavor.
You only need a handful of ingredients!
- 1 bunch of radishes (18-20 average size radishes)
- apple cider vinegar
- granulated sugar
- salt
- hot water
It may also be helpful to use a mandoline slicer to slice the radishes thin before pickling. It’ll make these easy pickled radishes even easier!
HOW TO PICKLE RADISHES
- Slice radishes as thin as you can. I like to use a mandoline slicer so the pieces are even but you can also use a sharp knife.
- Stuff all the radishes in the jar of your choice. I like using one with a lid that screws on tight.
- In a measuring cup, combine apple cider vinegar, salt, sugar, and warm water. Stir to dissolve the sugar and salt.
- Pour this pickling mixture over your sliced radishes and let them sit for an hour out on the counter.
- After an hour, cover and store in the fridge.
HOW LONG DO PICKLED RADISHES LAST?
Homemade pickled radishes will last for up to three weeks in the fridge. They will soften up the longer they sit in the fridge, so they are best used the first week.
