What’s The Best Cut Of Meat For French Dip Sandwiches?
In my opinion, a chuck roast is the best cut of meat for french dip sandwiches! It’s inexpensive to buy, which makes this meal a great family-friendly option!
You could use more premium cuts of meat, and they would be delicious as well.
But the thing I love about this recipe, especially when using the Instant Pot, is that the chuck roast gets tender and flavorful and gets the job done!
How Long Do I Need To Cook the Roast?
Since this is an Instant Pot recipe, people like to assume that it should be done quickly. Which, if you are comparing it to a slow cooker method, it is a lot faster!
However, you’ll want to allow your chuck roast to cook for 20 minutes per pound.
The Instant Pot has allowed us to cook it faster, but it still needs a lot of time in there to be fall-apart tender. The longer it’s in there, the more tender it will be.
I also like to allow the instant pot to naturally release after it finishes cooking. Anywhere from 20 minutes to one hour naturally releasing is perfect.
What Ingredients Do I Need to Make French Dip Sandwiches?
- 3-pound chuck roast
- Olive oil
- Salt
- Montreal Seasoning
- Onion
- Beef Broth
- Soy Sauce
- Butter
- Hogie Buns
- Provolone Cheese
You can use the juice of the cooked roast as the au jus for dipping if you want! I like to strain out the remaining bits of onion first. Sometimes you’ll need to season the au jus a little more before serving, so taste it beforehand.
A feast for a Crowd!
These french dip sandwiches are the perfect crowd-pleasing meal! You can easily double the amount of roast and seasonings, and cook them up with everything else the same! You do not need to increase the liquid amounts or the cooking time.
This would be the perfect meal for the big game, a party, or any event with a hungry crowd!

French Dip Sandwiches
I love classic french dip sandwiches! The meat is flavorful and delicious, served over a toasted bun with provolone cheese. Yum!
Ingredients
- 1 tablespoon vegetable oil
- 3 pounds chuck roast
- 2 teaspoons kosher salt
- 2 teaspoons montreal seasoning
- 1 large yellow onion thinly sliced
- 4 cups beef broth
- 1/2 cup soy sauce
For the sandwiches
- 6 hogie buns
- 6 slices provolone cheese
- Butter
Instructions
- Start by seasoning the chuck roast with salt and Montreal seasoning. Make sure to rub in the spices and evenly coat the roast.
- Turn on 'Sauté'. Allow the pot to heat up until the display reads 'Hot' and add the vegetable oil and allow it to heat up. Next, place the chuck roast in the pot and sear undisturbed on one side for at least 5 minutes or until it's nicely browned. Then, turn the roast over and brown on the other side.
- Add the sliced onion to the Instant Pot and sauté, tossing the onion in the browned bits as they cook. Continue to sauté the onions until they are soft.
- Add the beef stock and soy sauce to the pot. Turn off the Sauté function.
- Close the Instant Pot, set the pressure release valve to 'Sealing', and set the pot to cook on 'Manual' or 'Pressure Cook', 'High Pressure for 90 minutes.
- Once the 90-minute cook time has been completed, allow for a 20-minute Natural Pressure Release. When the 20-minute NPR has finished, release the remaining pressure and then open the pot.
- The chuck roast is ready to serve. It will fall apart as you try to remove it from the pot. I usually serve it straight from the pot. Scoop out some of the juice (au jus) with a ladle and serve it in a small bowl for dipping.
SANDWICHES
- Cut each bun, butter each side, and place two slices of provolone cheese on the bread, and toast in the oven under broil.
- Serve the roast over the top of the melty cheese and enjoy.
