Fresh Peach Parfait
Yields 6 Parfaits
8 Nilla Wafer Cookies
1 package cream cheese, softened
3 cups fresh peaches, or one 20 ounce can drained, divided
1/2 cup powdered sugar
1 teaspoon vanilla
3 cups granola
Whipping cream
Crush Nilla Wafers until finely ground.
In a mixing bowl, beat together Nilla Wafer crumbs, cream cheese, 2 cups of peaches, powdered sugar, and vanilla until smooth. Refrigerate until chilled.
Layer in Parfait Cups with Peach Cream, Granola, and Fresh Peaches. Top with whipping cream.
