This easy side dish would be the perfect complement to a Sunday roast, ham, steaks, or tenderloin! Really, it compliments most meals wonderfully! Easy Roasted Potatoes
One of my favorite side dishes to make are these easy garlic roasted potatoes! They take a few minutes to prep, and about a half an hour to bake with only a handful of ingredients!
The best part about this recipe is how quickly it comes together. I love when side dishes are simple and delicious, and this recipe is just that!
For this recipe, I prefer using red or Yukon gold potatoes when roasting. I feel that they crisp up a little better than using a white russet potato. Plus, they are easy to cube in bite-size pieces.
I then season the potatoes with fresh garlic, a good quality olive oil, fresh or dried parsley, and salt & pepper.
What Recipes To Pair with Roasted Potatoes
Potatoes are one of those foods that I feel really go with most recipes! They pair extremely well with beef.
I like to make this recipe with my Rosemary Pork Tenderloin or Sunday Roast.
But you could also pair this recipe with a honey baked ham or even a roasted chicken. These roasted potatoes would be a delicious compliment to either.
We make these garlic roasted potatoes almost weekly at my house, because everyone likes to have them for Sunday dinner. I mean really, who doesn’t love a good potato side dish?
Fresh Garlic Is Best
With this recipe, I do prefer to use fresh garlic for the best flavor. A lot of recipes like this call for garlic powder or garlic salt, but the flavor is simply not as strong.
I like to use fresh garlic when it is the main flavor element of a dish.
You can buy garlic at the grocery store and mince it yourself. You can also buy premade fresh minced garlic at most grocery stores.
For this recipe, you can use either! You want that flavor to be bold and strong! I promise it won’t be too garlicky either!
I would steer clear of using a powdered garlic or garlic salt just because you want the flavor to be bold and fresh. Sometimes in recipes like this, dried flavorings get lost after baking and we don’t want to miss it!
How long to Roast Potatoes
For crispy potatoes, I prefer to roast them at a higher temperature for the best, golden results: normally at 375°F for 30-45 minutes, while turning them a couple of times to ensure they crisp up all over.
If you want them to roast quicker, I would use a baking sheet rather than a glass pan. Spread the potatoes out on the cookie sheet and increase the temperature of the oven to 400°F.
Watch the potatoes closely and flip them once during the cook time. I would cook them for about 20-22 minutes and they should be done.

Garlic Roasted Potatoes
The easiest way to make Garlic Roasted Potatoes. These turn out flavorful and delicious, every time!
Ingredients
- 3 pounds small red or gold potatoes
- 1/4 cup olive oil
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons minced garlic (6 cloves)
- 2 tablespoons minced parsley
Instructions
- Preheat the oven to 375 degrees F.
- Cube the potatoes into bite-size pieces and place in a zip lock bag with the olive oil, dried parsley, salt, pepper, and garlic; toss until the potatoes are well coated.
- Transfer the potatoes to a greased 9x13 glass dish and spread out evenly.
- Roast in the oven for 30 to 45 minutes or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
- Remove the potatoes from the oven, and serve hot.
