Easy Lemon Chicken
One of my all-time favorite chicken recipes is this marinated Greek Lemon Chicken. It’s so flavorful and I love that it’s healthy. And when you grill it, you just add that much more flavor.
With this recipe, you don’t want to marinate it overnight.
You only want to let the chicken marinate for around 20 minutes! That’s all it takes for the greek yogurt to flavor the chicken, and it will result in a tender bite too!
What You’ll Need to Make Greek Lemon Chicken
- 4 (6 oz) boneless chicken breast
- 1 Tablespoon olive oil
- 1/2 cup Greek yogurt
- 1 Tbsp lemon zest
- 1/3 cup fresh lemon juice
- 4 cloves garlic , minced
- 1 Tablespoon Italian seasoning
- Salt and black pepper
- Chopped fresh parsley , for serving
How to Make This Recipe
- In a small mixing bowl, whisk together olive oil, Greek yogurt, lemon zest, lemon juice, garlic, Italian seasoning, and season with salt and pepper (about 1 tsp salt 1/2 tsp pepper).
- Place chicken in a gallon-size resealable bag, pour in mixture. Seal bag while pressing air out. Rub marinade over chicken. Transfer to refrigerator and allow to marinate for 20 minutes.
- Preheat grill over medium-high heat.
- Brush grill grates lightly with olive oil. Place chicken on grill, close lid, and grill about 4 minutes per side, or until chicken registers 160 – 165 degrees F in center of chicken on an instant read thermometer.
- Let chicken rest 5 minutes, garnish with fresh parsley then serve immediately.
